Rice question

I was going to do a leek risotto (sp?) for tea tonight but I've run out of the right rice. Will risotto work with ordinary rice? If not is there any kind of dish I can do with ordinary rice and a few veg? I can't go to the shop because I'm waiting for a delivery so I'm a bit stuck!

    I'd like to know that as well please, i dont like the look of risotto usually as it is a little to liquid and slimey for me but if it can be done dryer then i'll give it a bash. :D

    Layer of uncooked rice in a greased casserole dish. Layer of sliced onion, layer or thin slice potatoes on top and then add stock up to the top of the potato layer.

    Cook in oven for 45 mins to an hour when all liquid is used up.

    Yes, it's fine to use any rice - I just use whatever is to hand. In a way, it's easier not to use rissotto rice since it cooks best if the liquid is added a little at a time whereas with long grain rice, I just bung all the liquid in at once.

    If I'm using ordinary rice should I use the same amount of stock and cook the rice as if the stock's water if you know what I mean?
  • ordinary long-grain rice won't make risotto properly - it won't absorb the same amount of liquid as there isn't as much starch in it. Make a pilaf instead - sweat off your veg, chopped finely, add the rice and the usual amount of water, and cook.

    Agree with the pilaff - you could add some cumin and coriander to flavour it. Some broad beans would be a good addition.

  • Sadly the answer is no, as you need a starchy rice to get the creamy texture that make a risotto. so special. It will still be tasty but will be more like a pilau.
