Can I ask you all how long would you use the oil in a deep fat fryer .Is there a specified number of times you can fry with a quantity of oil.Does anyone know exactly how many.
The reason for asking is that I was told that superheated oil can release cancer causing breakdown products.Any truth in this??

Interesting , I usually just keep the oil in the cupboard , didn't realise it was best in a fridge :-/ but do now
I also used to strain the oil through the strainer thing that came with the fryer but it didn't seem to do much so will try kitchen towel next0 -
if you wash a pair of tights or if you have an odd pop sock just pour the oil through that and that does the job0

That sounds like a better idea , cause i can see the kitchen towel soaking a lot of oil up :-/ thanks0
