Diet/recipe Help Please

My husband isnt well at all and I am trying to drastically change how we eat, was advised to put him on the low GI diet. I read a bit about it and it seems to be veg, salad, fish and chicken. He will be starving without something a bit more filling ! However healthy it sounds, salad and an apple is not a filling satisfying dinner !
Has anybody any ideas for low/fat low sugar desserts, and things to bulk out a salad ?
The other problem is the cost of this healthy eating...:eek:

  • I did read somewhere that protein is meant to fill you up better than carbs - so if he's eating chicken and fish, that could easily bulk up a salad- maybe a nicoise with tuna, egg and (not so many) potatoes.
    Btw, I think I also read that sweet potatoes are not as naughty as normal potatoes (in this kind of diet)

    Is he allowed to eat wholewheat pasta? I find that really tasty and filling.

    Hmmm desserts..... can't think of any off the top of my head. Maybe if he's got to cut down on the sugar, just try to eat more savoury stuff in the main course. Or have a soup for a starter.
    Fruit for a dessert could also be an option - you could make it more interesting. ie. slice fruit (apples/pears/peaches/plums/nectarines/whatever) and grill with (a very small sprinkle?) brown sugar, cinnamon. You could eat this with 0% fat yoghurt. Or a fruit salad with lots of fresh mint.
  • Also wanted to add - I don't think it has to be so expensive - you don't have to buy all sorts of exotic fruit and veg. When you look at some healthy recipes they've got you juicing avocados/blueberrys/goji berries/etc etc. But I think there is really a lot of normal fruit and veg - maybe try some recipes with things you don't normally use?

    Another recipe idea (might be too unhealthy????):
    Slice unpeeled banana lengthways. Stuff in some very small pieces of very dark chocolate. Close banana and wrap in foil, bake in oven. I like this just in its own, but maybe you could accompany it with 0% yoghurt or creme fraiche.

    This is the low Glycemic Load eating plan that I've been following since the end of January.

    The trick is to increase the amount of fat you consume. That fills you up and makes your feel full.

    I start the day with a cooked breakfast. Bacon/eggs/mushrooms/tomatoes fried in coconut oil. The bacon I get is usually bacon pieces in a 1kg pack from Heron's. If it's lumpy bits rather than rashers I just chop it up a bit. The coconut oil is from an Asian grocers rather than a health food shop and costs me just £1- £1.50 a 500g pot. It's a good source of medium chain triglycerides and they break down into ketones very easily so encourage your body to burn fat rather than glucose so you lose weight more efficiently. I find I can last through to lunchtime quite easily after that lot.

    Midday I have a salad from leaves picked from the garden, tomato onion cucumber grated carrot, grated celeriac watercress etc together with some protein (tin sardines in tomato sauce or half a tin of herrings in sauce or sliced up salami, corned beef, eggs cheese) and some coconut oil/vinegar dressing.
    I like all my meals to have some low carb veggies/protein and fat content.

    For my evening meal I'll have a good portion of fish or meat plus the usual 2 veg but instead of having potatoes/rice/pasta/bread I have another low carb veg. So tonight it was beefburgers with carrots, spinach, fried onions & mushrooms again it was all fried in coconut oil.

    quick low GI tips:
    • bulk cook brown basmati rice and freeze in portions ready to zap in m-wave, it's much more filling for longer so you soon get used to smaller portions
    • vinegar and lemon apparently help lower the GI, so enjoy your HM salad dressing
    • add lentils and pulses to your HM recipes, stock up on tinned pulses for convenience, they made salads very filling. Cannellini beans are lovely and creamy in stews, I've used them in a beef pot roast and chicken and chorizo stew recently. I've used tinned green lentils ( 3 x 400g tins for £1 @ sains) in HM pilau rice, quick dahl, hidden in shami kebabs ( delia cheat recipe).
    • microwave sweet potato for lovely quick meal, v. nice with boursin. sweet pots m-wave quick than white pots, maybe due ot different shape? it takes about 4 mins in my Category E microwave.
    • puddings - try buckwheat pancakes, add portein to lower the GI, e.g. add some flaked almonds, or make crumble topping with some of flour replaced with ground almonds.

  • How about sugar free jelly? You could even add different fruits for a bit of variety.

    Watch out for 0% fat yoghurts as they are often packed full of sugar.

    Have started us on a low GI and low sugar diet because of the husband's failing health. It has knocked my budget to h*ll, as had to buy Splenda and loads of fruit & salad stuff. Am most upset, as I'd just got the Asda shop down to £35 -ish and now its gone up to high £40s. I dont suppose there's anybody else in here in the same boat who has ideas ?
