Mashed potato gone 'sticky'

And other stuff too...
DH managed to make rather too much mashed potato the night before last, so I stuck it in a bowl in the fridge intending to make some fishcakes with it. My mother gave me some leftover takeaway curry last night so I didn't make them then, and I have just taken them out of the fridge and they are very sticky and are forming strings (IYKWIM) when I put a spoon through them...
I don't usually eat a lot of potatoes (they don't like me) so I have no idea if these are okay to use...
They were made with butter and double cream and DH is heavy handed with the cream. I had a nibble and they taste okay, a bit cheesy which worries me because I know he didn't put any grated cheese through them!! Will I be poisoning him if I feed them back to him in fishcake form??
Edit: My mum would also like to know if she can safely use up frozen veg which is defrosted and refrozen (broad beans, sweetcord, petit pois)... my dad has been using them as ice packs for his back and she doesn't want to waste them if poss!

hmm, strings say gone off to me. I'd bin.
And you should never refreeze food without cooking it first, so I'd say bin the veg too.

I would eat the veg (not the spuds though) as not much harm will have come to it, maybe just not as good quality. I wouldn't eat defrosted and refrozen meat though

I'd keep the veg in the freezer for use as future ice packs-save any future wastage
