Recipes for bean dishes

As both my DDs have gone veggie now, I stocked up on dried beans,wondered if any of you have any really good recipes using beans.
One I would really like is for good beanburgers, I love the frozen ones you can buy but would like to make my own.
Have gone veggie myself just to see if I can, was tempted by meat at work for the first few days but now am fine and will probably carry on.
DD1 is not pleased because she was the only veggie in the family and reckons we're just copying to annoy her!

    loads of cooked beans, couple of tins of chopped toms, some herbs and seasoning, simmer for about 30 mins, add some crumbled feta just before serving. serve with crusty bread and butter. yummy!
  • Bean Burger recipe no 1

    Fry a chopped onion untill soft then add some garlic and fry that for a bit

    Add this to some mashed kidney beans (I often use a tin of value beans for this because the price difference between them and cooking from scratch is very little) a good glug of soy sauce, some mixed herbs and then add about a handful of oats:eek: I know it sounds strange but it helps to bind it all together and you don't taste them in the burgers. Leave this mixture for a while to firm up - the oats are soaking up the moisture - then firm into burgers. I get about 6 using my burger press.

    Bean Burger recipe no 2 although it does use chickpeas:D

    This one was developed for my veggie student daughter
    Take a tin of chick peas - drain of the liquid into a cup
    Put it into a food processor and wizz then add the contents of a dried packet of stuffing - this is where you now add in some of that liquid from the chickpeas untill you get a firm consistency that you can shape. I now make a variation of adding some frozen peppers with grated carrot and parsnip to the mixture before forming them into burgers. The initial recipe will yield about 6 burgers when I add extra veg I can stretch it to 8/10

    3 bean veggie chilli:
    use whichever 3 beans you have in for this recipe

    fry a chopped onion and a couple of gloves of garlic in a pan, add chilli flakes (depends how hot you want it). Add a chopped pepper and a couple of fresh chopped tomatoes, then pur on 2 tins of chopped tomatoes and youe beans (if they were dried, make sure you prepped per instructions). If the mix is too thick add a bit of water, then simmer for about half an hour. Season to taste..if you find its not hot enough for your liking add a drop of tabasco.

    lentil bolagnaise!

    fry an onion and chrushed clove of garlic till soft.

    add 4oz lentils (red split) and cover with water (and a bit of marmite) cover pan and cooki for 10 mins.

    add 4 grated carrots and a handfull of finely chopped mushroom plus a tin of chopped tomatoes and a tablespoon of tomato puree. simmer for 30 mins.

    serve with pasta.

    or make into a sheperdless pie (with mash) or a lasagne with pasta and cheese sauce!! at a push its great on its own.

    This chili is wonderful:

    Slow Cooker Vegetarian Chili


    11 ounce pinto/kidney beans, cooked


    15 ounce kidney beans, cooked


    15 ounce chickpeas, cooked


    1 can baked beans


    500ml passata


    1 (15 ounce) can whole kernel corn, drained


    1 onion, chopped


    1 green pepper, chopped


    2 courgettes, chopped


    2 stalks celery, chopped


    2 garlic cloves, chopped


    1 teaspoon chili powder


    2 teaspoons cumin


    1 tablespoon dried parsley


    1 tablespoon dried oregano


    1 tablespoon dried basil





    1. In a saucepan, saute the onion, pepper, courgette, and celery for about 5

    minutes.

    2. In a slow cooker, combine all the different beans, passata
    , corn, onion, pepper, courgettes, and celery.

    3. Season with garlic, chili powder, cumin, parsley, oregano, basil


    4. Cook for about 6 hours on low.

    I too am after a good bean burger recipe - I love Nut Cutlets but they're not ideal as I'm doing Slimming World
