'Different' bread

Hi
My son needs OS help. He is making bread on monday in his GCSE food technology lesson. His teacher wants them to make a 'different' sort of bread. We have thought maybe some sort of Foccacia style with olive oil, salt and Rosemary that I make or he wants to make one with cheese. As I know there is a strong tradition of bread making on the OS board I thought I could call on you for your favourite unusual breads. Thank you

What about Sharons Olive & sun dried tomato bread?
Olive Bread
10g olives sliced
200ml/7fl oz warm water
375g white bread flour
1½ tsp salt
1 tbsp sugar
25g/1oz butter
1 tsp yeast
25g/1oz well drained sun dried tomatoes in olive oil
Put water in, the flour and other ingredients as normal.
When machine beeps add chopped tomatoes & olives
Use normal setting, medium crust, small loaf.
It says to add the tomatoes when the machine beeps (when you normally add seeds etc) or during the last 5 mins of the kneading cycle.
Says if the dough looks too soft after adding the tomatoes add a tablespoon or two of extra flour.
Or Sharons fruit loaf?
Rum and Raisin Loaf '75g/3oz raisins
[1½ tbs dark rum
1 egg
[140ml/5fl oz milk
[350g/12oz white bread flour
[]¼ tsp ground ginger
[25g/1oz castor sugar
[]½ tsp salt
[40g/1½oz butter
1 tsp easy blend yeast
[2 tsp clear honey (warmed)
[Place raising and rum in small bowl and let soak for 2 hours or longer if you can.[/font]

[Add egg and milk to bread machine pan.[/font]

[Add flour into pan.[/font]
Add castor sugar, ground ginger, salt and butter to pan (all in seperate corners)
[Add yeast to centre of bread pan

[]Set to basic normal setting, medium crust, small loaf.
Add rasins when machine beeps or after first kneading
[Put on wire rack, brush top with the warmed honey and leave to cool.

2- 3 overripe bananas
1 cup sugar
3 tbsp veg oil
2 eggs
2 cups self raising flour
Put on pizza cycle for 5 mins – scrape down corners. Bake on bake cycle for 55 mins

Would a rye bread be "different " enough? Or could he start a sourdough off on Friday and use that on Monday for his bread.
I made Pilgrims bread today from More with Less - with cornmeal, rye, white and wholemeal flour (although I use more wholemeal). Then I used some of the dough to make savoury Chelsea buns with cheese, tomato and ham.

I don't think you'll get much more different than Thriftlady's recipes here.

I can guarantee that the recipe for 'craggy' bread is different and delicious!

If she wants him to make a different sort of bread why not try an unleaven bread like chappati

Thank you to all who replied. He can't do unlevened as it is has to be a yeasted bread, he thinks now he might do Naan. I am going to try and point him in the direction of thriftladies strips with the olive oil and Rosemary ( like a bread I make already) - then that will do for his sisters lunch box!! I thought a Bara Brith type, like the fruited bread from Caire/ Sharon, as I am half welsh, but that was too different!! She is always asking them to do different things, at christmas it was mince pies. The problem is he doesn't really want to be different!! As he says when most of your class are girls he stands out enough as it is!! Difficult being 15.0

This is our favourite focaccia recipe:-Focaccia Bread
Ingredients2 3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon dried basil
1 pinch ground black pepper
1 tablespoon vegetable oil
1 cup water
2 tablespoons olive oil
1 tablespoon grated Parmesan cheese
1 cup mozzarellaDirections
1• In a large bowl, stir together the flour, salt, sugar, yeast, garlic powder, oregano, thyme, basil and black pepper. Mix in the vegetable oil and water.
2• When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for 20 minutes.
3• Preheat oven to 450 degrees F (230 degrees C). Punch dough down; place on greased baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil. Sprinkle with Parmesan cheese and mozzarella cheese.
4• Bake in preheated oven for 15 minutes, or until golden brown. Serve warm.
It's certainly different and, with all those herbs and parmesan, very tasty!0
