Hello All
I've just got back from a truly crappy day at work and have received a text from a friend telling me to expect her at 7.30 for the dinner & catch up I apparently promised her
I'm not even going to go there!
I've checked the fridge & freezer & would you know it, all I have apart from the cupboard stuff is some frozen fish & veg. I have:
*smoked haddock & coley fillets
*frozen carrots
*frozen green beans
*frozen diced swede
*frozen sweetcorn
*a bottle of wine
Can anyone come up with an edible meal from that? My brain seems to have gone on holiday & I can't even make sense of the bbc food website for ideas. What do I do
for dessert, I've got icecream & a custard tart I was planning on treating myself to over the weekend.
Any help truly, truly appreciated

have you got any rice? Make savoury vegetable rice and have it with the fish.
you could have carrot and swede soup to start.Member no.1 of the 'I'm not in a clique' group :rotfl:

If you have
Rice - make kedgeree, add hard boiled eggs
Potatoes - fishermans pie, either topped with mash from the freezer or scalloped potatoes and quick sauce
knock up some pastry and make a quick fish and veg pie
failing that, she's your friend, just go to the chippy!
open the wine and have a good time

I was going to suggest rice too - for kedgeree. Do you have any eggs?
Kedgeree:

Thank you for replying guys, I've opened some of the wine & was thinking of breaking my saving promise & ordering in (shush!). However, I've had a glass & it all seems a little less daunting
:D:D
I'm stuck between the steaming the fish in wine, with veggie mash or the rice and fish.
