What can I do with raw 'fish bits'?

I got a bargain in the form of a whole salmon in Sainsburys yesterday and have just finished chopping it up into bits for the freezer. Now I'm left with the head, tail and fins that still have a wee bit of meat on and would seem a shame to throw out. The obvious thing would be to make fish stock but I'm not sure how and what I'd actually use it for! Recipes and suggestions would be very much appreciated! :confused:
If I hadn't seen such riches, I could live with being poor...

    Poach the fish bits and then use it to make a rissotto or salmon and cream pasta.

    Absolutely.
    Once cooked you can scrape the meat of the bone easily.
    Trick with fish stock is not to overcook (goes bitter and funny)

    Raw fish bits - mix with egg white and breadcrumbs, form into balls and poach in fish stock. it's called quennelles and it's wonderful served with a sauce made from a tin of lobster bisque. don't quite know the proportions but mary berry has a recipe in her big cookbook
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

    Fish soup or fishermans pie. I actually sometimes buy the salmon scraps specially for this (you get a huge bag for about 60p! I'm not paying out for a fillet just to cut it up!)

    well said! u will find that most "offcuts" r only trimmed from fillets 2 make the fillets look more appealing, same quality just much much cheaper!
    Would you destroy something perfect in order to make it beautiful?

    Yep! Same reason that if you buy chicken breasts, theyre about 25% smaller than the ones you cut off a chicken! They (who exactly are 'they' I wonder?) cut them to make them look nicer and more uniform, and use the offcuts for mince.
