Lemon thyme can be used to make a nice stuffing for roast chicken - chop it up and add it to some breadcrumbs, softened finely chopped onion and some sage (fresh or dried) and bind it together with some milk or egg.

Parsley can be added to a basic white sauce to make a parsley sauce to go with fish or ham.

Both can be chopped finely and added raw to a salad.

If there's lots, you can always freeze them in ice cube trays to add to things later

Lemon thyme goes well with carrots, either cooked or raw.
Chop leaves finely and add to butter to melt over cooked carrots, or add chopped leaves to a dressing for grated raw carrots
Chopped parsley is great with fish, ham Jerusalem artichokes or sprinkled over a raw mushroom salad first dressed with vinagrette or lemon juice.
