'going off' vegetables

can they be salvaged into anything?

mine usually find their way into a stew in the slow cooker. if they are not 'stew' veg, then i usually do a monster pasta primavera and steam a lot of veggie's and not a whole lot of pasta together. Either sprinkle with parmesan cheese, grate and melt regular cheddar, use a white cheddar sauce, or a pesto sauce.0

Mine ususally end up in a "chuck it all in" soup. It's never repeatable but it does save wasting the veg and turns it into a "free" meal or two if you think that the veg would otherwise have just gone on the compost.
Start each soup with a fried onion, chuck the veg in and add stock and maybe a few herbs from the garden, cook veg until soft enough to blend and whizz it all up (if it's too thick add some more water). This can then be eaten immediately or frozen and taken to work for lunches.
Not very imaginative, but money saving nonetheless!

I have just bought a bag of reduced pots, par boiled and then freezed them for future roasts.
