'New' statute barred start date?

I saw a posting by Sourcrates (made 2019) in the debt templates part of this forum saying the 6 year statute barred 'clock' starts ticking from the date of the default notice or the date the default states payment needs to be made by - im not sure which.
Can anyone clarify?

If CCJ is put aside, does that change the clock. In other words, the claimant says it was 5.5years since last payment to when ccj claim was started in 2019. IF ccj is set aside now in 2021, does that mean its 5.5+2years since last payment and so is now def statute barred?
