    Thanks guys, its nice to know I'm not the only one who feels smug when they do this :)
    Here's a couple of the recipes, I'll need to check exact amounts for the others before I post them.
    Pasta sauce

    2 red onions (chopped)
    1 red pepper (chopped)
    4 cloves garlic
    dash olive oil
    tin chickpeas
    tin toms (chopped)
    handful frozen peas
    Handful frozen Sweetcorn
    ½ tube tom puree
    teaspoon Italian herbs
    water as needed

    Saute onion, pepper, garlic in olive oil.
    Add all the other ingredients.
    Add a dash of water so it’s a bit runnier than you would want it.
    Simmer for about 10 mins, stirring occasionally and adding more water if needed.

    Chickpea burgers (an adaptation of Gillian McKeith’s ones)

    Tin kidney beans
    Tin chickpeas
    1 carrot (grated)
    1 small onion (grated)
    1 clove garlic
    2 tblspns boullion powder
    2 oz sunflower seeds
    2 tblspns tahini
    A couple tspns of the oil that sits on top of the tahini.

    Chuck the whole lot in a food processor and whiz for about 15 secs, push it down with a spoon and whiz again. It needs to be fairly coarse.

    Using damp hands, shape into about 20 balls and put on a lightly greased baking tray. Flatten into burger shapes. Cook for 15- 20 mins at about 200C.

    In her recipe she adds a handful of fresh chopped coriander, but I never have any. Also she says not to add the oil from the tahini but I find them too dry so I did this time and it was better. I may add a tblspn of olive oil next time.

    These are actually really nice with gravy n roast potatoes, or this lunchtime I chucked a scoop of the pasta sauce over the top, and that was nice too :)

    I cooked 11 main meals last thursday, froze them all in takeaway containers, then once they'd frozen, I took them out of the containers, double bagged them up, all labelled nice and clear. When my friend came round on Friday evening, I just had to show her the freezer drawer with all my nice neat homemade ready meals!!! She didn't really know what to say, bless her!!

    Wow, this sounds like a really cool (and fun!) idea, I think I'll wait 'till my housemate goes out then start on a cookathon :D
    He'll probably find out and ask if he can have one of my meals which would upset my budget... I can allways sell them to him :cool:

    I am trying to do the sme.
    I did manage on sunday to make, Beef stew, shepherds pie, sausage plait and cooked a sunday roast, all in between running DS to football and DD to tap exam.

    I have learnt so much reading these OS boards, I feel more organised now and seems like I have much more time for other things, or maybe thats just me!!


    These boards have definately had an impact on me, for the better of course.

    My slow cooker is on now, with a lovelly bacon joint in sliced apples and honey, yummmmmmmmmmmmmm

    I have just made the most beautiful desert!!

    I cooked my nectarines and made a compote, bought a big tub of half fat natural yoghurt and some crunchy muesli and fortunately I have some containers which shop bought chocolate sundaes came in. I now have a very posh looking lunch time treat for tomorrow and they would work out pretty darn cheap considering pret a manger charge about £1.50 for a tub!

    To be honest I just guessed quite a bit!!

    I used the following though:
    4 nectarines chopped and skinned
    1/2 cup water
    1 cup soft brown sugar
    1/2 tsp lemon juice
    Cornflour


    Basically I put the water, lemon juice and sugar in the pan and heated through until dissolved then added the nectarines. Simmered with the lid on for a good 5 mins. Then added cornflour, probably about 2 or 3 tsp then turned up the heat and kept on stirring round until thick enough, probably took another 20 mins.

    I think next time I would reduce the sugar a little but after ive had it today ill decide, its all to taste really. Ive read cinammon is nice added but I thought I would stick with the basics first!

    Ive got a pot now stored in my fridge. its probably enough for about 5 people.
