I always hide the gammon and make sure I cube the leftovers and pop in the freezer. This then goes either in a pie or in with some mushrooms or chicken in a creamy sauce etc.Living the dream and retired in Cyprus :j

I tend to have one day a week where I don't buy anything specific for that day but have a 'use up' meal. This is usually the day before I shop. Often tends to be the nicest meal of the week. Usually its from something like chicken or a slice of bacon that was excess in the week. I freeze it and use it up - often with rice and any veg left over - makes a quick risotto.

Well done, wasted food is just that. A waste, try to imagine that cash going out in the bin. I like to challenge myself to come up with recipies to use up almost everything.
Fruit puree is a favourite to use up over ripe fruit. Serve a few spoonfulls over yoghurt or rice pudding etc.Life is short, smile while you still have teeth0 -
Well done that lady great way to streeetch a meal into two or even three.I love to do that as well and have found especially over the past year that my food budget lasts me a lot longer and I have a freezer full of food .Unless you are running down your freezer to defrost then an empty or half full freezer is costing you more money to run.I amgoing on holiday in a few weeks so I to am extending my meals and buying a lot less .obviously the need for fresh milk and fruit and veg is still there but stretching other bits and pieces makes so much sense.I only wish we had a 'pat on the back' symbol I would definitely award you several.lets see how many more folk can come up with a few recipes for streeetch stuff.I can, with a few veg and herbs make a pretty good pasta bake using only two pork sausages cooked and chopped into chunks, once the bake is done I portion it up and can usually get at least four portions One to eat fresh and three for the freezer.I put these into those plastic containers that you get from the take-away shops that usually contain rice.My eldest DD saves these for me and I have a good stash of them in the cupboard.they will hold a decent portion for me and stack easily in the freezer0

Funny you should say that jackieO I have quite a few of those containers in my freezer holding sauces and gravies when I've made too much. Any excess sauce that uses wines and therefore, expensive i freeze and throw over a roast dinner.
We ended up having both the suet rolls for tea tonight as the family wanted to try both, and I have to say my sausage and bean concoction was the winner in the taste stakes! Will def do that one again, not too sure if ill repeat the gammon one tbh! There is still some of both left for lunch tomorrow.

My favourite streeetch is a pack of cooking bacon, I buy 600g in the poundshop, I always search for one with chunky bits not rashers and cut it into 4.
One portion does a big quiche with mushrooms and sweetcorn 4-6 portions depending on how much of a pig I want to be
One portion does four pizzas using leftover french stick
One portion does 4 bag, onion and potato pies
and the fourth portion fried up with onion mushrooms and tomato tops 4 big baked potatoes.
16 meals from one pack cant be bad.Slimming World at target0 -

I would love to do this with my whole family but DH and DSS are so flipping fussy. , but can I freeze some left over lamb from a roast today then, (Previously frozen) & if so when would I have to use it by?
