I'm not a huge baker, but I do like cake, I use this simple recipe from Isa Chandra most often. It's nice even without the chocolate ganache.

I've written down the tofu satay recipe to try out - probably dinner tomorrow (and the day after....:cool: - that well-known repetitive eating thing singles have to do)....
Looks like it should be one I don't have to "think about" and I'm guessing I can use some other type of nut butter in it. I don't have peanut butter in (not sure I'm that keen on that personally) - but I do have almond butter and cashew butter:)0 -

I hope you like it! It would probably work really well just as a curry if you can't find a nut butter that worksBut I'd think the cashew would be lovely personally

Made this today, as husband was very keen on the sachet's of sausage casserole mix (Schwartz or something?) but I don't really buy packets of spices as I have a very healthy spice rack which is used on a daily basis.
Anyway, loathed to spend £1 on a packet of flavouring, I decided to go it alone. I took a photo of the ingredients and tried to mimic them with just fresh ingredients and a selection of herbs and spices. I tasted very similar to the packet version and went down a treat
Slow cooker Sausage Casserole
Serves: 4
Ingredients
2 tins chopped tomatoes
1 onion, sliced
2 sticks celery slices
3 carrots sliced
2 small peppers (I used red and orange) sliced
Sausages (Highly recommend Linda McCartneys sausages)
1 pint veg stock
1 tsp each, oregano, basil, cumin, garlic powder
½ tsp each paprika, chilli powder
Method:
add tomatoes, onion, celery, carrots and peppers to a slow cooker
add herbs and spices and stir well
add veg stock and stir again
pop sausages in and put lid on
I cooked mine on low temp for about 7hours as I was out all afternoon, bearing in mind there is no meat in my version, you may need to adjust for a non veggie versionDebt Free Journey started 21.05.20170 -
I'm another omni who likes to have veggie and vegan meals regularly. Aquafaba sounds intriguing. ( Does it genuinely work or are people just kidding themselves? )
My favourite vegan meal is Jack Monroe's Peach and Chickpea Curry, and I'm looking forward to reading Jack's new book, when it finally arrives on my doormat.

Super easy Mushroom and Spinach Risotto
Serves :2
Ingredients
200g risotto rice
1 onion, diced
2 cloves garlic, minced or finely chopped
1tsp thyme (dried, or equivalent amount of fresh)
1pt veg stock
punnet mushrooms, sliced
½ bag spinach
Olive oil
Method
Heat some oil in a big pan, add the onions and garlic and cook until soft
Add the rice and thyme and cook for another minute, stirring
Add mushrooms and fry for a few minutes
Add a small amount of stock, keep stirring until it is soaked up by the rive, then keep adding stock bit by bit. Cook until all stock is used and rice is just cooked.
Add the spinach and stir through until melted.
Season and serve
Please note, if you haven't made risotto before, you really do need to keep giving it a stir very frequently. This isn't a dish you can really make if you can't spend 15 minutes or so in the kitchen with it.
Also, a lot of risotto recipes have wine in them and feel free to add a splash of white if you have some spare. I don't drink and think this is tasty enough without, but as always you can use this recipe as a base to have a tinker with

Today for dinner we had one of my faves... Samosa baked potatoes with Hummus
I found this recipe a while ago online and whilst the original link is long lost to me, I still make this frequently.
Samosa Baked Potatoes
Serves: 4
Ingredients
4 large potatoes
olive oil
1 onion, finely chopped
garam masala, ½tsp
curry powder, heat and amount to taste (I used tbl medium)
handful of peas (I used frozen)
Method
Bake the potatoes. I pr1ck mine with a fork and coat with a thin layer of olive oil, then cook on a low heat for a long time until crispy (I don't time this, sorry). You probably could microwave them, but I'm not keen.
Remove the innards of the potatoes and place in a bowl
Add a little oil to a frying pan and fry onions until cooked.
Add spices and peas and mix well, I left mine on the heat until the peas defrosted.
Add onion and peas mix to the potato bowl and mix really well
Restuff the potato skins with the mix and pop in hot oven for 10mins
The original recipe advised to serve with yogurt, but as I don't eat dairy and soya yogurt would probably not go, I serve ours with a lovely big spoonful of homemade hummus on top... I promise it is amazing!

Have you tried the Alpro almond flavour? I've used it for a few savoury things and it does quite well.:hello:0 -
There's also coconut yogurt - which I like and buy "voluntarily" so to say.
It's on the dearer side - but I gather it's very easy to make and basically just involves adding pre?/pro?biotic capsules to canned coconut milk. So it's on my list of things to try out at some point.0 -
Many thanks for the recipes, I am vegetarian but gradually trying vegan foods too. I use nutritional yeast mixed with grated cheese and nuts to top pasta.Although everyone could try vegan cheese.I would love to make the vegan coconut 'yogurt'.0
