How do I make

Options
chicken and sweetcorn soup? I usually buy it from asda:o but would like to attempt to make my own. Can anybody help me?

    This is from a pm kindly sent to me by MRSMCAWBER, and very good it is too!

    Strip any meat you can off of your roast chicken, drop the carcass in a pan of cold water with a carrot and an onion, bring to the boil and then reduce and simmer for about 1 1/2hrs....strain the stock into a pan,
    Get a tin of sweetcorn i use those tins about 400g and tip it into a liquidiser - with the liquid and blitz for a few seconds - tip it into the stock.....it looks a bit icky at this point but they will never know ;) , then whilst its heating up mix some cornflour with cold water and add to the soup (depending how thick you want it) and then just season,,,, you can whisk in an egg white...it gives you those stringy bits you normaly get - but i dont like that so i dont bother:D
    and if you want to convince them its the "real stuff" sprinkle the top with chopped spring onion and any extra bits of chicken you have(great for using up all those little bits)....ooohhh and soy sauce....

    It is so cheap and seriously yummy.... oh and it freezes too - if you get chance:p

  • I have a really easy one from Good Food magazine ages ago:

    1 x chicken breast finely chopped
    3 x sping onions finely sliced
    1 inch piece of ginger finely chopped
    1 x can of creamed corn
    1 pint of chicken stock

    It's really delicious - t stretch it out I also break in some egg noodles.

    Yum - hungry thinking about it. :T
