  • I've been flicking through this thread and I think its absolutely fantastic. We should definitely spread the love through baking more often! I'm not so good at the uploading of photos, but I'm going to make a chocolate cake for my brother and his fiancee tomorrow, just because I'm popping over to see them. Congrats to everyone who's already made beautiful baked goods!

    hey thanks for that mrbadexample i wasnt thinking i would get to join as i dont even know how to take photos and upload i was just trying to say thanks, but hey number 11 makes me happy and delighted ...will be taking some ingredients to work tonight to see if i can make anything else ...really fancy having a go at the carrot cake recipe that was a few pages back yum yum

    Bake for about 1 1/4 hours. Stand cake for 5 minutes in tin, then turn cake onto wire rack (right side up) to cool.
    Spread cake with lemon cream cheese frosting.

    * I use dark brown mascovado sugar

    Lemon Cream Cheese Frosting


    30g butter softened
    80g cream cheese
    1 teaspoon finely grated lemon rind
    1 1/2 cups (240g) icing sugar

    Beat butter, cream cheese and rind in a small bowl until light and fluffy
    Gradually beat in icing sugar.



    TIPS

    I cover the tin with tin foil to prevent the top burning.
    Pecans are nice if you don't have walnuts
    For the cream cheese I use full fat philadelphia.
    Its very tasty without the icing too.

    i have just used this recipe and i can vouch that it is delish and really easy to make and now i feel like a big fat bloater cos i`ve eaten two slices :o i did make it for my dad who is visiting tomorrow...he can still take the cake (whats left!) i`ll just have to tell him i have funny shaped/dented cake tins and thats how it was meant to be :A :rotfl:
