get a medic to give you an opinion and get a Power of attorney (enduring) now if they say she is OK.
Avoid the Court of Protection like the plague if you can. They charge a lot for their services and have been the subject of two highly critical reports for their failure to look after people. Recently changed their name but not sure if thet has improved their level of competence. Chekc out the over 50 forum for advice on this. Willman if I remember

Agree with RAS to avoid the Court of Protection if at all possible.
Unfortunately my gran's consultant said she lacked capacity, when in truth the only thing she was, and still, seems adamant on is that mum is the only one she wanted to deal with her affairs, but now her estate has to pay the CoP for the priviledge. It doesn't make a great deal of difference now (besides all the extra paperwork and hassle) because care home fees will just take up whatever money the CoP leaves, but once she gets to the £12k limit and stops paying for the home, I don't know if CoP carries on taking the cash.
