You've misunderstood what tailoring means, not changing the factual bits but emphasising different roles and skills according to each opportunity you apply for. Its like writing a different cover letter for each application, unlike sn application I saw recently for a graduate scheme that said how keen they were to work in finance, unfortunately they were applying to an engineering company.
So, if the jobcentre are "suggesting" (I actually mean "demanding") that I apply for retail roles, how do I "tailor" my CV so that it focuses on retail, when I have no retail experience?0 -

You don't have to have experience of working in retail to posses skills and experience that are relevant to a retail job. I'm sure you've heard people talk about 'transferable skills'. I'm an NHS prof working with kids in special schools and I could cram a CV full of retail relevant stuff.
Give us a few jobs you've done and I bet we could come up with loads of relevant skills and experience.0 -

Whats the worst case scenario? Every job ive been into, theyre not bothered about what I did previously and it never comes up after interview stage.
They may ask you for a notice period, just say one week. If its a high profile job, say 2 weeks.0 -
If you actually sat there in an interview and lied to their faces about still working at your last place, then the best advice is as given above - withdraw your application and look elsewhere. Do not wait for an offer.0
