Fructose? Can't find it what else should I buy instead?

I've a low fat lemon cake recipe, that says to use fructose. I can't find it on tesco online, any ideas what else to buy?

  • you can get it from the chemist there is liquid or powder you probably need the powder it's quite cheap
  • Its called Fruit Sugar by Tate and Lyle. If that isn't there you could try Perfect Sweet which is Xylitol, another 2natural" sugar with fewer calories and a lower GI than sucrose which is the name for our ordinary sugar.

    If it's the recipe off last night's telly, they only use fructose because they reckon it's sweeter per calorie, therefore technically healthier for the same weight. I wouldn't bother buying it if it's hard to find, just use normal sugar if you have it.

    Try searching for glucose powder - always wondered why but if you look at the ingredients it says 100% fructose! - I know Morrisons do it so the others probably do as well
  • i tried making this cake on Wednesday, printed the recipe and was so excited. Made it with normal caster sugar and followed the instructions (about the boiling of the lemons etc) to the dot but the cake has come out weirdly. The lemon taste is really bitter, like eating the rind and its really dense although I did cut down slightly the amount of almonds.

    I don't know if you've already tried it emeraldbugle, I'm not trying to put you off, but you might want to try tasting the lemon puree before adding it, I did and thought it was horrible bitter but thought it might get better during cooking process!! Wish I'd tried to rectify it now! Hopefully yours will come out well, look forward to hearing how you got on....

    Well, I received the fruit sugar last night, so will attempt the cake this afternoon or this weekend, kids permitting!

    I will try the lemon puree beforehand and see if it is bitter, thanks for the tip Lucy. Mine could be for the birds too, will let you know!

    Am sure hubby has a jar of lemon curd somewhere, maybe I should just use that?
  • personally, I would keep the lemon curd on standby. I'm normally fine with cakes but that one escaped me. If you do the puree anyway and try the puree before adding then there's nothing to lose, except a couple of boiled lemons :-)

    Maybe the fructose makes all the difference?!

    Well, I made it Friday afternoon. Yuck! The cake was definitely very bitter!

    No wonder it is a low fat cake, one bite and you don't want anymore. :rolleyes:

    What a bizarre recipe :confused: No fat at all :confused:

    If you want to eat Lemon Cake, then make a "real" one - cut down on other food to compensate - a week of salad should do it :rotfl: :rotfl:

    Try Delia's Iced Lemon Curd Lemon Cake and if you don't want to layer it, just make the lemon sponge :D

    And remember that "everything in moderation" is just fine, so if you have a treat, then just cut down elsewhere.
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)
