And Today's Challenge is....

Options
Hi All

Sure you're up to this challenge :p

I am defrosting my freezer later today and intend to restock it tomorrow using my fab hoard of Mr M's M&M vouchers. :T Sad person that I am, I am excited at an almost free freezer full of food heading my way :D

Anyway, after months of working my way through my freezer food, this morning, I have 3 things left in my freezer. And I am stuck for ideas on how to use them.

8 pitta halves (brown pocket thingies)
1 large bag of frozen peas
3 large freezer bags of allotment runner beans that I have chopped and blanched. There are still more runner beans to be harvested at lottie

So...the challenge....there is only me...what would you do to use these up?

I have an empty freezer, so am happy to spend tomorrow making homemade ready meals I can freeze for future incorporating these as ingredients somehow when they have defrosted. I already have a cupboard full of chutneys incorporating runner beans, but was thinking vege curries maybe? Also pea and ham soup to freeze. Any other suggestions gratefully received :)

But am well stuck on using the pitta halves quickly.

Don't worry about the fact I'll have to add ingredients...that's fine.

Ta Muchly

Pittas can be cut into squares, drizzled with olive oil, seasoned with salt and pepper and then baked in the oven for 10 mins - makes lovely crisp pieces that are great dipped in soup.

Fab idea. Thanks! Could I then keep them fresh for a wee while in an airtight container do you think?

ETA - it doesn't say on the packaging that they can't be refrozen. If I did a couple of mini pizzas, should I freeze them cooked or uncooked, do you think?

I imagine they'd probably keep for a few days

Also have had pitta strips for dipping in soup or hummus. Makes a change from feeling you have to use pittas stuffed with food or only as part of a dinner.
  • +1 for the soup!
One of the quickest soups you can make. If I don't have ham I sometimes add fresh mint.

I like the idea of a stew - see below, hugh fearnley whittingstall.
No experience with runner beans, the wi seem to suggest soup too.

All could be frozen when cooled down afterwards (when the freezer is defrosted :) )
  • Fill your pittas with scrambled egg and peas.

That's tomorrow's brekkie sorted. I never thought to use them for breakfast! (And Maisie has just laid me an egg, too)

Some lovely ideas there :T. Especially garlicky butter runner beans with dinner tomorrow. That sounds delish!:p

Will have to look up the runner bean soup. Can't imagine that somehow, but part of the fun is trying different things, and soup can include all kinds of weird and wonderful ingredients, so why not?

Am just about to start on the pea and ham soup. I got the last ham shank...apparently, there'd been a run on them this morning. It must be Autumn!

That's how you make homemade nachos :) Not sure how well they'll go with soup, but maybe if cook them so they're crisp but not actually crisps, they may work well!
