Wedding BBQ - Big D's BBQ

Hi guys I need some advice.
We're looking at doing an American style BBQ for our wedding next year and found Big D's BBQ. I've been in contact with them about booking just wondered if:
a) any one has used them
b) Is it normal to book at caterer without trying their food first?
My partner is suggesting we should at least try their food first but they're about 300 miles away from us which makes it a very long trip!

If you can I would take a trip. Perhaps make a weekend of it. The last thing that you want it for you to hate the food or it not live up to your expectations.

Aren't all BBQs the same? Hot meat, bread/rolls, salady stuff, stuff to squirt on it? What's "American"?
Seems crazy to drag somebody 300 miles (return) - there must be somebody closer than can whip up a hot burger in a roll with some ketchup!0 -
That was why I wanted American style so it wasn't just some burgers and a bit of ketchup.
The American style bbq's make ribs, low n slow brisket, pulled pork, mac n cheese you name it- it's a bit more exciting and also the type of food my partner and I wanted at our wedding.0 -

This is why British BBQs are usually so disappointing.
I went to the wedding of a couple of friends (a Swiss/Argentine couple) and they had a full Argentine asado BBQ at their reception. Now that's a proper BBQ.Let's settle this like gentlemen: armed with heavy sticks

That sounds like just my sort of thing but I would insist on trying it first, could potentially ruin your wedding if it wasn't what you expected it to be.0
