I'm planning on making some cherry jam. I've only made strawberry before and used jam sugar, which can also be used for cherries, so I was just going to use the same recipe for the cherries (recipe is on the packet of sugar).
The strawberry was really easy, just crush the strawberries, add the sugar and heat gently whilst stirring until sugar dissolves, then bring to the boil and boil for 4 minutes. Pot up.
I don't use the waxed discs. I recycle jam jars and use the lids from those. Wash in hot soapy water, rinse then put in a warm oven to dry. Put the lids on the jars straight away while everything is still hot and as they cool, they'll create a vacuum in the jar.0 -

When I make damson jam from HG fruit, any maggots in the fruit float to the surface and can be skimmed off

Apologies if there is a recipe already for this but google wasn't much help. Does anyone have an idiot proof recipe and method for making cherry jam/conserve. Also, i have only jam jars to use but not any wax sealing papers. Does this matter because that's what's stopping me making any damson jam at the mo too!!

As this has fallen from the front page of OS I'll add it to the existing cherry jam thread, which has a really simple recipe
If you use lids with a plastic coating on them, you don't need waxed discs

This has been a very good year for cherries. I even got quite a few from my own cherry tree. I guess I have picked about 30lbs now over the last 4 weeks. I have 25 jars of jam and that's with giving some away. I decided we have enough jam for the forseeable future and have been making cherry pie filling instead now. Somone posted a recipe. Just gently cook cherries (pitted first) till soft with some sugar, then mix a bit of cornflour with water and add it to the cherries. It is just like the tins of cherry pie filling. I have loads of it. So that's the cherry cheesecake sorted for the year as well.Anyone who lives within their means suffers from a lack of imagination:beer:

Just finished making my cherry jam. Picked up 5 punnets from Asda as they have them for £1 at the moment.
Used 3 and a bit punnets for the jam and I made cherry vodka with the others.
Also, I came across a recipe the other day for cherry stone liqueur, so some of the cherry stones will be used for that but I need to get some brandy first.0
