That's a good result on the bank complaint.

Had a very pleasant afternoon yesterday - coffee and cake with a chum. We had a good natter and put the world to rights
Today is going to be a fairly low key day. Few chores to do but otherwise the agenda will be to relax.

Also been catching up on some surveys whilst catching up on some tv viewing...it's like being paid to watch tv :rotfl:
I've also treated myself to 2 new books. They are ones that have been on my wishlist for a while..but I used vouchers so feels like I've gotten them for free
Two more days til payday but I've looked at my online wageslip today to see what effect the small payrise I had will make - and I will be £70 a month better off :T
Now waiting for my tea to cook. Mexican style chicken & rice. :drool: yum!

Not really. It's just an amalgamation of bits and pieces really and can vary each time I make it depending on what I have in the fridge.
Today's version involved:
- red onion
- yellow pepper
- green pepper
- red pepper
- courgette
- 2 tsp chilli powder
- 2 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1 chicken stock cube (crumbled)
- 1 tin chopped tomatoes
- 2 chicken breasts
I chop it all up into bite size pieces and mix together and put in oven (around 180) for around 40 minutes until cooked through.
I had today's with rice but it also works with cous cous too0 -
Nice, thanks! We've generally got our meals all sorted via pre-selected meal plans, but it's nice to have extra things to throw together on the weekend.0

I love the idea of meal planning but I'm just not that organisedIf I've got a few meals loosely planned out, I consider that a result! Though I do often make large amounts and freeze the leftovers for easy meals another time. That's better than nothing I guess?

I'm definitely a convert. We've been collecting recipes that we like over the years so I went super simple and just grouped them in 7s until we had 8 weeks' worth. I've curated them a bit to try and combine ingredients (two dishes that require mozzarella in the same week, for example), but otherwise have left it as-is. For each week I set up a grocery list of stuff for just this week, veg for this week, staples that we should have but need to check stock on, and spices (again, should have but may need to re-stock).
Then once a week I create a grocery delivery order with that week's stuff, stocking up on anything in our staples/spices list that's on sale at the time. Sometimes I get two weeks' worth of stuff in one go so that we get free delivery.DH goes into town on Saturdays and gets the veg in person as we've found the quality of delivered veg to be hit-or-miss.
I thought it would be a lot more time consuming than it is, really - there was a decent amount of upfront time commitment to create the week's shopping lists but now that they're done it's just copy/paste from the things to get delivered into mysupermarket and the things to buy in-person into our weekend to do list. Most of our recipes are meant to feed 4-6 so we generally have leftovers to freeze for lunches/lazy days/etc. I really like knowing that we have all the stuff on hand for a week's worth of food and don't have to debate what to make or try and figure out substitutions for things we're out of.0 -

I didn't make it in yesterday as had a shockingly cruddy day at workso decided to spend the evening pretending the outside world didn't exist. I hid on the sofa eating chocolate and watching mindless tv. It was just what I needed and I felt better equipped to deal with today.
Today has been better, mainly due to the fact it's payday :T I had some 'leftover money' from last month and so made a £30 OP just because
I'm currently in the middle of completing 2 week long diaries (one for tv viewing and one for health/beauty/cosmetics) for different survey companies. One will pay cash and the other vouchers.
It's halfway through the week for me as I have Friday off - so the long weekend is a bit longer
Hoping the weather bucks it's ideas up though as it's been bonkers today - rain, sun, hail, sleet and snow at various different times... and sometimes a mixture of the lot!
