i bought 2 very large tomatoes on impulse so ideas needed

was in the local fruit and veg shop and there were big huge beefeater type tomatoes.... so i bought 2

i was thinking of putting them in the oven with some sort of cheese and herb filling but now that i am home my mind has gone blank with what and how to do this....

so do i need a certain cheese etc ?

either that or i could re- sell them for bust inplants...lol....

  • I think you have to slice the top off the tomato (and keep), scoop out the contents then chop and mix with your filling - cooked rice, cheese, herbs, cooked onion and garlic, cooked courgette (what ever takes your fancy)

    then put its hat on (ie the tomato top) and bake in the oven for 20 minutes or so.
    any cheese will do - preferably one that melts nicely.

    These are gorgeous if you just slice them up and 'layer' them with fresh sliced mozzarella (the 'wet' stuff in balls, not the Danish 'pizza' stuff) and some chopped fresh basil. If you put them on a sunny windowsill for a couple of hours before you want to eat them then they warm up and taste absolutely lovely ...
