do these type of comps restrict what you can buy or do they just give you 10k worth of vouchers and let you get on with it?

Usually vouchers, but given they talk about design consultation etc, I think this may be more 'guided'. It wouldn't surprise me if they'd want to take photos etc to use in their publicity, as £10k is a lot of John Lewis goodies to give away... However, it does say you get to select your own goods, so they won't tell you what you have to buy... :)

ETA - it also says in the Ts and Cs that if you don't use all of the £10k, it won't be given in cash, so it sounds to me like they're not vouchers you could use at another time, if you spent less on the room transformation.

They expect John Lewis fitters to plumb it in ;)

    From their website

"John Lewis is an official Installation Standards Partner of the government-sanctioned and industry-supported Institute of Kitchen, Bedroom & Bathroom Installers (iKBBI)"

Lots of bathroom comps etc don't include the installation, only the goods... It says in the terms they do include in the prize installation of anything that John Lewis is able to install :)
