Cheap, easy & quick veggie 'dinner party' type meal?

We have friends coming over on Friday so will need to cook for them. OH is veggie so I need some easy (I can't cook!) quick (it'll be after work) and cheap to do.

Any ideas? Otherwise they are getting cheese and fresh bread and it'll be continental-style! :rotfl:

    Not particularly cheap I'm afraid, but a winner ;) Get a small whole Brie or Camembert and some ready made puff pastry. Roll out pastry a bit bigger than the cheese, place cheese on top, roll out another piece of pastry and seal all round -bake for about 20 mins in a hot oven.

    Or, instead of the pastry, bake the cheese in it's wooden box for 15-20 mins then serve with boiled new potatoes for dipping into the cheese.

    Or, make a cheese and mushroom tart. Roll out a rectangle of puff pastry, score 1 cm in all the way round the edge.Put on a baking sheet. Place some cooked garlicky mushroom and pieces of melty cheese or blue chees on top of pastry and bake.

    Cheese fondu is a good one too.

    What about a veggie or lentil chiili? You can make it the night before (to save time and allow flavours to develop) and just cook the rice on the night.

    Offhand I would think about Mushroom Risotto, Stuffed Peppers (Delia Smith has a good recipe), or perhaps a baked pasta dish. if you are worried about cooking time, some prep could easily be done the night before.

    Edit:Cheese and Onoin Filo Pie. a friend once made this for me and it was quick, impressive and delicious.

    There's a Rosemary Conley recipe that could be adapted. Buy one of the packs of frozen mixed veg - the ones with cauli etc in. Put in a dish and cover with cheese sauce - either HM or bought. Brush a pack of filo with oil and scrunch up each sheet on top of the pie to cover. Bake for 30-40 mins until golden and bubbling. Looks good as well.

    Quorn pieces or fillets, sauteed in butter add some white wine and simmer down. In a separate pan fry off some mushrooms in butter and black pepper. combine the two pans, add some cream to create the sauce. Serve over Tagliatelle.

    I usually make this with chicken but have tred it with quorn and works very nicely.

  • This dish is incredibly easy and quick to make. From the BBC simple suppers book

    Don't forget the nutmeg as it does make a difference to how it tastes.

    Fry one chopped onion in a tbsp olive oil until soft.
    Stir in 400g can of chopped tomatoes
    Boil for 10 mins
    Meanwhile make a white sauce (look up on Deliaonline.co.uk and search for her all in one white sauce, it is so simple)
    Cook 10oz broken up spaghetti in salted boiling water for 8 mins, add 10 oz broccoli cut into florets and cook for about 4 more minutes (sometimes I add it a little sooner to the spaghetti water as we like it softer)
    Put a grill on
    Stir 4 oz cheese grated into the white sauce
    Drain pasta and mix it with the cheese sauce
    Spoon half the spaghetti sauce into an oven dish (maybe a nice one for going onto the table to serve) about 3pt in size
    Spoon the tomato sauce over, then cover with the rest of the spaghetti sauce and sprinkle with a little more grated cheese and grated nutmeg over the top
    Grill for 5 - 8 mins

    I tend to serve with crusty bread and peas, although you might want to do a nice salad or something if it is for guests

    It sounds long winded, but I have literally put in every conceivable step for you.

    It really is a very easy dish

    Ps - I used to be vegi but my husband is very much a meat eater, and this is one of the only dishes that he eats without complaining there is no meat!

    You could try gingham ribbon's vegetarian thread on this board (somewhere) - the recipes sound great.

    If I were you though I'd have a go at some kind of lasagna. You could do it ahead of time so you could taste and check it's okay. It's better made the day before I think (I prefer made and cooked, some on here would say make but don't cook). With a nice salad and some bread it's perfect..

    Though if someone sat me down to some nice bread and cheese I'd be in seventh heaven :)

    Howabout a veggie stirfry with marinaded tofu, and either straight-to-wok noodles or rice?
