Hi all,
I've usually been accessing the site via my phone, but today I'm actually at a computer, so (belatedly), here's the ginger cake recipe:
2 cups of flour (plain)
1 teaspoon of baking power
1 teaspoon of baking soda
3 teaspoons of ground ginger (level)
a pinch of salt
¾ cup of sugar
2 eggs
1 cup of lukewarm milk
1 cup of golden syrup (i.e., one small tin)
225 (250) grams of melted butter
Sieve flour, baking powder, baking soda, ginger and salt.
Add sugar.
Heat milk.
Beat eggs and add to heated milk and golden syrup.
Add eggs, milk and golden syrup to dry ingredients.
Mix well.
Melt butter.
Add to other ingredients
Beat well (at this stage the mixture is very sloppy).
Bake in 20 cm (greased) tin at 180 c for one hour. (Tin can be larger – mine is about 23 cm).
An electric mixer is good for this recipe, but I have mixed it by hand at times.
Here's a few notes to go with the recipe, but its nothing major.
I've started to have the oven slightly lower for 10 minutes at the beginning to try and stop it burning and then up it to 180 for the rest of the time.
I start checking it from about 40-45 minutes to see if its started looking too dark since ginger can burn.
Butter: the original recipe is for 225 gm of butter but since my tin is 23 cm instead of the 20 cm I melt the whole block, keeping a little of the melted butter back to grease the tinfoil so it doesn't stick to the tin (easier for washing up)!
Golden syrup - small tin = 1 cup. So, no need to measure - open tin and pour. A spatula becomes becomes very useful at this point!
However, its a very forgiving recipe. Over the years I've used all sorts of different sized cups and teaspoons for measuring and so far, its been OK. I've also left out baking soda (since the shops near me never seem to stock it). If you can't find baking soda, use a combination of bicarb. of soda (3/4 tsps) with cream of tartar (1/4 tsps) instead.
I also try to remember to have the sink full of hot, soapy water to immediately chuck the golden syrup tin & other items into. I'll do anything to make the washing up easier!

Buffy - its a really easy recipe. I don't 'do' difficult when it comes to cooking.
Although, getting up at silly o'clock to bake it one day before work, and have time for it to cool enough down and put it in a bag and take on public transport had its moments.
So, I'm up and start mixing the butter and milk and so on. The oven is on and up to temperature when I reach into the cupboard for that tin of golden syrup "I know" is there. Nope.
Turn off oven. Chuck on a few more layers and head down to the 24-hour petrol station a few streets away to grab some - which they luckily had.
Despite the delay between mixing and baking - all was well and tasty.0 -
