  • I made these last night using 1 carrot, 1 onion and cannellini beans as we didn't have any kidney beans. Yes they do hold a lot of water however I found the best way to keep the shape was to roll them into balls and then roll the balls around in a plate of flour (rather than just floured hands as per Jack's recipe) before flattening them out with the palm of my hand. Make sure the oil is REALLY hot before sliding the burgers off the spatula into the pan, but not so it burns on impact! A couple of mins each side did the trick, although the second batch were more successful (crispier and darker) with the hotter oil.

    This made 7 burgers for us. Coupled with a pack of pittas whoopsied to 9p, and 6 old spuds cut into wedges and brushed with olive oil and garlic granules, we were well satisfied for under £1.

    Didn't have any mango chutney, so we used up some natural yoghurt with a tsp of mint sauce and a jar of red onion chutney.

    Well impressed.

    I ran out of eggs one day and needed something to bind bean burgers together, so I used a tablespoon of peanut butter instead. They seemed to keep their shape okay (and if you add sweet chilli sauce and corriander if you have it, they have a nice thai-kinda taste)

    I'll be trying Jack's recipe soon thank you!
