Banoffee Curd

Having seen Banoffee curd on sale at a farmers market, I thought of trying to make some myself, yet despite umpteen searches on the net, I couldn't find a recipe. Feeling at a loose end on friday night I decided to put my thinking cap on and try to adapt a lemon curd recipe. I substituted dark brown sugar for white, and bananas for lemon and gave it a go and have to say I am very pleased with the result. Below is the recipe I used, it made one jar.
10 oz Soft dark brown sugar
2 bananas
2oz butter
2 Free range eggs. beaten.
Mash the bananas with the sugar until a fairly smooth puree is formed. Do this in a heatproof bowl that can be placed over a pan of boiling water. Add the butter chopped into pieces. Place over a pan of simmering water and stir caonstantly until the butter and sugar are melted. Slowly add the beaten eggs stirring all the time. Continue stirring until the mixture thickens enough to coat the back of a wooden spoon. Note this last step can take a while. Warm a clean jam jar and pour the thickened mixture into the jar. Leave to cool and set then seal. I suspect this will like other curds need to be kept in a fridge and used within one month.

Does sound yummy, I've been buying the Thursday's cottage variety for a while, it makes a very sweet but yummy pud, so your HM banoffee curd would probs do the same, I slice a banana into a bowl, add some ice cream vanilla works best, drizzle some of the banoffee curd over then topped with squirty cream and grated chocolate. Great for sweet tooth's! My DSS loves it and I think it's a very yummy quick pudding
Will have a go at your version as I have a couple of bananas that need using ASAP, got everything else in so will be cheaper than the one I buy, hmmmm could make a banana sponge cake in the future and split it then sandwich it with the banoffee curd and serve with cream ::drooling:: I love anything with bananas in, thanks for the tip

Gosh, that sounds delish!! I make banoffee mess (as we call it... it never ends up pie-like in our household!!) evrry couple of weeks as my OH is a banoffee nut!

I used it on toast on Sunday morning, but I was thinking along the lines of herbaholic in that I think it will make a great filling for a sponge cake along with cream. I also thought it might go nice with some banana bread, but will need to wait till next weekend now as I don't have time to bake when I'm at work.0
