Has anyone tried the baguette recipe yet? Was thinking id have a go but I dont have a mixer, just wondering if I could do it by hand but then I wondered if it is a wet mixture?
Or will it be kneadable? Im guessing in ye olde days it would have been done by hand or wooden spoon? Och might just have an experiment n see what I end up with :-)0 -
Lovelife79 - I tried the soda bread recipe you PMed me. There is no butter or oil in it. It was very crumbly, too crumbly, do you think that was due to the lack of oil/butter?
Another thing, I've noticed some of PH soda bread recipes say to use bread flour, but I always believed bread flour needed kneeding to breakdown the gluten & you don't need to knead soda bread.
Anyone else thought this odd?0 -

I make soda bread and I use any plain flour. The recipe is from the King Arthur Flour Baking Companion. It's similar to this:

I just looked at all of his soda bread recipes in "100 Great Breads" and there's butter in all of them, but not in the "How to Bake" soda bread. I'm wondering if it's a misprint.
Incidentally, I use the value white flour for everything I ever bake and it works out fine.Softstuff- Officially better than 0070 -

And I made a great discovery last night: you can freeze foccacia dough after the first knocking back then defrost it, let it rise again and cook it and it works out just fine.
I prefer How to Bake. I liked 100 Great Breads, but it's slightly out of date and the recipes call for fresh yeast opposed to fast action yeast (as a matter of preference I find it easier to bake with fast action yeast). Also How to Bake has some lovely baking recipes in too.'I solemnly swear that I am up to no good'0 -
Quick question for those with the book BREAD (and for those who haven't, if you want to chime in
).
Do you think the grilled vegetable picnic loaf would freeze well? I really want to make this, as I think it would make a great lunch dish for my husband to take to work with him, but not sure how well it would keep.

Oh no! Thats a shame. Just double checked recipe and defo no oil/butter mentioned. Also it says plain wholemeal flour and plain flour. I didnt find the bread crumbly at all but will look out for that next time I try it0 -

Re the plain flour v bread flour, I didnt mean the recipe you sent me, but other recipes of his.
And the baker brothers - I think I saw them using bread flour for soda bread recently & that surprised me as I thought you HAD to kneed bread flour & you shouldnt kneed soda bread.0
