  • Ok folks, I can bear it no longer: I am going to have to get a Paul Hollywood book - especially as I have an Amazon voucher burning a hole in my pocket:)

    But the question is: which one:
    How to bake,
    Bread, or
    100 Great Breads

    Which one do people recommend?

    And I made a great discovery last night: you can freeze foccacia dough after the first knocking back then defrost it, let it rise again and cook it and it works out just fine.

    7WW, I like both so it's a hard decision! If I had to choose only 1 it'd be the 100 great breads, because it's mostly bread and bread alone. I notice the How to Bake has more photos and more steps, but he's also adapted the recipes more. There's a chapter on sourdough in it I'd be unlikely to ever use (tiny flat and it stinks the place out) and rather a lot of other nice baking goodies, which although they look lovely, aren't what I wanted one of his books for.

    I got the 100 Great Breads at the book depository, when I'm in England I might pick up the How to Bake from Asda, since it's 10 pounds there.

    I got 100 Great Breads a few years ago from a charity shop, it was out of print at the time so I was well pleased. It's a lovely book, out of the three it's probably my favourite.

    The new one finally turned up yesterday afternoon so I'll be trying something out today, haven't decided what. Maybe some focaccia to go with something Italian for dinner.

    sorry been in work all day. 1st time ive had a chance to get back to you.
    made the buttermilk with a tablespoon of vinegar. worked a treat :beer:

    I am dairy free....... I wonder how I would get around the buttermilk....? If I use soy milk - don't think adding vinegar would help?

    Are you dairy free or lactose intolerant? You can get lactose free regular milk over here, that does do the vinegar trick. Other than that I'd substitute in some runny soy yoghurt.

    100 great breads is £3.99 in The Works, they had a pile of them in Redcar. DH said its better than his new book.

    Not necessary - just add the vinegar to soya milk and it works just like buttermilk.
