Well the simnel cake went pretty well
But I'm not convinced my hot cross buns are going to work. They're just on their second prove at the moment, but they don't seem to be filling the baking tray! Oh well, I'll see what they are like once the oven is up to speed.

Edited to add: Oh no! What do you call Hot Cross Buns without the cinnamon? Cos what ever it is - I've just made them. Idiot, idiot, idiot! I'm going to try putting some cinnamon in with the apricot glaze to see if I can inject some spice flavour!0 -

Pity the second programme was not as practical as the first. Would only be tempted to try the pitta.
What put me off most was his self praise and congratulation which got quite nauseating. And the sloppy eating habits didn't appeal either (sorry one of my pet hates).
May record next episodes and then skim for anything useful.
Have experimented with his bloomer recipe and found that overnight proving made the loaf much tastier and a nice openish crumb.
Don't think I'll be watching again he is rather up himself! I expected a show about bread not the stuff to put on it!!Slightly bitter0 -

I have to say I had never really seen much of Paul Holywood before - I never watched the Great British Bake Off, however I did watch this programme.
I sometimes use a Panasonic breadmaker to make bread and although the bread is quite nice it isn't nice enough for me to make it our permanent source of bread.
Watching the first programme I thought I'd have a bash at making a bloomer, I used iPlayer to guide me through the process and the bread was absolutely delicious and we have eaten that ever since - I have bought no bread - a first for me. The bread has been consistently good even though I have used different brands of flour and yeast over the last couple of weeks.
Our grandson (11) who lives with us doesn't like milk so his breakfasts are normally toast/crumpets/muffins etc - since making the first loaf his breakfast has been bread and butter - no jam or anything else wanted on the bread.
I have made the pittas and will never buy another one they were absolutely lovely.
I will make the hot cross buns this weekend and if they taste as good as they look I will be delighted.
And this from someone who was convinced years ago that they would never be able to make decent bread by hand.
Regardless of the rest of the programme content, the gems that have come out for me more than make up for it - and to be honest I've found the other parts interesting too.
If he, up himself or not, can persuade or inspire some people to have a bash at making their own bread instead of eating the chemical crap the majority of us eat, that has to be a good thing.0 -
Being in Australia, I haven't seen his programme. When this thread started and people seemed to appreciate the show I got his book, 100 Great Breads from the library.
I've been able to make "serviceable" loaves previously. I had no satisfaction at all with a breadmaker and resorted to repeated attempts with different recipes by hand. I had no bother with pizza dough and have made that successfully for years, but very good bread escaped me.
So far I've made his white bread and his wholemeal bread and they've both been fantastic. When I gave hubby the white bread he had no idea it was home made. I find his recipes so good in fact I'm buying the book (and it's rare for me to actually buy a cookery book) and won't buy bread again. Well the Hot Cross Buns (or rather the fruit buns with apricot and cinnamon glaze) were ok, but not spectacular. They were probably ok if they'd been eaten fresh last night but they seemed a bit dry for my liking this morning. Still my colleagues wolfed them down (yes up here in Scotland it's business as usual and we're all at work).
I've decided I'm going to try and do at least one hand baked bread thing (rather than in the mixer or in the breadmaker) a week. I'm still not very good at kneading though - it starts off so sticky that I end up adding to much flour to try and get the dough under control.

If you mix it in your Kenwood (or whichever make you have) it's still handmade - as Mary Berry said to PH on the Easter Bakeoff Masterclass when PH mixed something in the mixer "you're being normal!".0 -

I seem to be getting into a routine of listening to The Archers podcast whilst making my bread- once the podcast ends I leave the dough to prove........... I'm so rock and roll.....LBM- finally kicked in 16/12/08 @ [strike]£41,862 [/strike] £0.00/ DFD- 24/12/13

I've given up on my bingo wings - muscle elasticity reduces as you get older :rotfl:
