Help me devise some veggie meals please?

Just been out to restock the fridge and freezer, and now have:
- Quorn sausages, burgers, fillets, mince, chunks
- Veggie fingers in breadcrumbs, frozen mixed veg, peas, sweetcorn, carrots, green beans
- Courgettes, leeks, onions, cauliflower, mushrooms, cucumber, avocadoes, grapefruit, apples, baby potatoes
- Green lentils, chickpeas, pasta
- Fresh dill and ginger
- Yoghurt and various cheeses
- A full range of dried herbs and spices, plus the usual things like pasta, rice and tinned stuff
I'm thinking cauliflower and chickpea curry with cucumber raita for tomorrow, and a misc veggie (courgette, leek, mushroom) stew for Sunday with the dill and some fresh bread.
Any other suggestions? We'll probably only eat quorn once every few days, but DH isn't terribly sold on the vegetarian idea so I want to do some nice stuff that he'll hopefully like, and I'll cook the odd bits of meat for him have as well.

Off the top of my head...
Quorn sausages - giant toad in the hole with onion gravy
Burgers - chance to go mad here, lots of pickles, salad, cheeses, fried onion, potato wedges.....
Fillets - with new potatoes and green beans
Mince - bolognese, lasagne, moussaka.....
Chunks - korma, saffron rice, naan bread
Veggie fingers in breadcrumbs, frozen mixed veg, peas, sweetcorn, carrots, green beans - just add mash..
Courgettes, leeks, onions, potatoes - frittata
Cauliflower - soup with crusty bread
Mushrooms, cucumber, avocadoes - summer salad0 -

It's got coconut milk in and it one of the nicest veggie dishes I've ever made. Even DH (a bit of a meat fan) loved it and has asked me to make it again since!

-cauliflower cheese
-cottage pie with the quorn mince - I've found if you use proper bisto powder (rather than instant gravy powder) in it, it gives a really great consistency.
-vegetable crumble - yummier than it sounds - various cooked mixed veg with some parsley, add a dash of milk and some flour to make a sauce. Then top with marg/flour as crumble with nuts, seeds and cheese on top. Cook in the oven for about 30mins till brown n crispy on top.0 -
