    I doubt there's anything in the book that you don't know already, but some things I learned:

    Fish is generally the best low fat source of animal protein. Ostrich meat is high in protein. Baked potatoes are good as is soya. There was a picture of a baked potato with cottage cheese and chopped bacon...sorry it's not much.

    I couldn't think what to have for dinner tonight - and I didn't fancy trekking to the shops (all 10 mins away!!). The slow cooker curry is now using up a couple of oap carrots, some sad celery and an old onion, making the best of an opened jar of curry paste and depleting my stock of chickpeas and passata. Dinner for free (sort of) as the veggies really wouldn't have made it to tomorrow.

    All the recipes on here sound lovely, but, if I gave them to my husband, he would be like "wheres the rest"!!!!! Hes a greedy so and so.

    I think I will cook them for myself and the kids and give him something else.

    They're pretty hearty meals. We're big eaters too. But you could always try one with a pudding? It's a faff trying to cater for everyone isn't it!

    He is a total nightmare.

    Tonight, ive made pasta with homemade tomato sauce & spicy sausage. There is a great big load left over that I could freeze or I could have tomorrow, but, he will eat that AND he will ask where his chips/potatos are.

    My food shop is absolutely attrocious and its all because of him.

  • This thread has really inspired me to be more creative with veg - thanks Gingham. Made humous (? spelling) for lunch for the first time yesterday and really enjoyed it though used 3 cloves of garlic which was probably too much! Over the weekend going to try the following since it is simple and I have a couple of aubergines to be used:

    Aubergine Melts (serves 4)

    3 Tbsp olive oil
    2 aubergines, halved lengthways
    4 tomatoes
    1 x 150g mozzarella
    basil

    Heat oven to 200C. Drizzle the oil over the aubergines and bake for 25 mins till softened. Meanwhile slice tomatoes and mozzarella then arrange on top of aubergines. Return to oven for 5 mins till cheese has melted. Scatter over some basil. Serve with couscous and green salad.

    That sounds delicious. I'm looking forward to getting some aubergines now.

    I have never tried it this way but I understand if you roast the garlic first it gives humous a wonderful depth of flavour. I keep forgetting to get a lemon so we've not had it yet. I'm going to try to do it today.

    P.S He polished off all the pasta, and he wanted chips too:eek: :naughty:
    He doesnt believe all this eating will catch up on him one day.
