    What about adding some Quorn or Soya meat as it would increase what you can make?

    A really good snack you can make is:
    cooked Pasta, pesto, few slices of Mozzarella, then something green like green pepper, rocket, bazil leaves. The flavour of the cheese goes really well with pesto and the refeshing nature of the green leaves.

    I'm not brave enough to make a quiche yet, so I'm going to try broccoli soup using this recipe. Now it's out there I have to do it!

    I make quiche LOL - and believe me I'm no chef!

    Really easy:
    3oz wholemeal flour/3oz self raising flour/3oz butter - butter rubbed into flour (I also add some herbs/a dash of veggie bouillon for flavour.) Add a splash of water (go easy!) until it makes a soft dough. Roll out to size of a flan dish and line, and stab with a fork and bake for about 10 mins.

    In meantime, fry onion, add grated carrot and frozen sweetcorn (you can vary what you put in, like you can add pre-cooked broccoli, or chunks of red pepper, but I tend to stick with three ingredients.) Fry gently until soft. Spread over base of quiche case. Add a handful of butter beans or other beans (I lke chick peas.)

    Break three eggs into a bowl and whisk. Add a handful of cheese and mix in, and seasoning, I usually use black pepper but don't add any salt as the cheese is fine for this.

    Bake at gas 7 (sorry don't know equivalents!) for around 20-30 mins, I usually find it doesn't take too long before it starts to gently brown on top.

    I have found this recipe means the base is slightly more crumbly than a shop-bought one, because of the w/m flour. It's reeeeally easy to do with a three year old and a shouting eight month old round your feet and I usually serve it with some bits of salad and HM potato wedges.

    Jo, you inspired me to experiment. I made a quiche! I will post a pic later. Here's the recipe:

    Leek and butterbean flan

    Line dish with wholemeal shortcrust pastry, !!!!! base and bake for 10 minutes.

    Small leek
    Tin butterbeans rinsed and drained
    clove garlic
    parsley
    1 egg, beaten
    2oz grated cheese
    milk and single cream to total of 150

    Fry small chopped leek in garlic and veg oil
    Rinse and drain butterbeans. Add parsley and leek
    Add to dish.
    Top with 2oz grated cheese
    Mix 1 beaten egg with 150 of milk/single cream mixture

    Bake at 180 degrees for 40 minutes.

    Now can anyone explain to me what the difference between a flan and a quiche is please?!

    Churchmouse, I didn't think of adding the cheese to the galette dough/batter! I was going to layer it on top of the leek but made the quiche instead, so I'll give that a go this week. Lovely idea.

    Courgette quiche with grated carrot and mixed seed salad
    Cold creamy pasta salad
    Cheese and spring onion sandwich
    Cold pasta salad with PSB pesto
    Crusty bread with red lentil and swede pate
    Baked potatoes with PSB pesto and mozzarella
    Cauliflower soup and crusty bread


    Dinners:

    Troll's bean burgers with carrot and seed salad and roast potatoes with garlic and rosemary
    Pasta with avocado dressing
    Leek and cheddar galette with quick braised celery
    Courgette quiche with crusty bread and carrot and seed salad
    Sharra's creamy mushroom and chickpea pasta
    Pizza with courgette, onion, olives
    Cauliflower soup and fruit crumble

  • Hi Gingham!! Thank you for all your fab ideas, we're not veggie but love eating veggie dinners, I do get stuck for inspiration sometimes and these have really helped!!

    Couple of questions for you if you don't mind.....

    could you please post the recipes for
    • Broccoli and potato gratin
    • Nut roast
    • HM mushy peas
    (or direct me to their location)

    Also, where can I find/how can I make Aubergine pickle???

    The nut roast I have been buying but if anyone has a recipe I'd be glad of it. The broccoli and potato gratin I didn't make but I was just going to make a cheese sauce with garlic in, slice the potatoes thinly and steam with the broccoli for a few minutes before putting in the oven with cheese sauce on top and add some grated cheese to top at the end. Again, if anyone has a recipe that'd be grand.

    The aubergine pickle is lovely. It's with the lime pickle and mango chutney etc in Morrisons near the curry pastes. I stir a little of any of them into curries for more flavour.
