the filling can be as simple as slices of cheese and very thin slices of onion encased in the pastry and cooked.
Personally - I would cook the onion until caramelised then spread over the cheese! or do a very cheesy mash filling and pile fried onions on top!
  • I use shortcrusy pastry. For the filling I fry onions until golden brown. I boil potatoes until soft then mash with a little butter and milk. I then add the grated cheese and the onions to the mashed pototoes and mix well together. I roll the pastry out and use a saucer to cut around. Put a good spoonfull of the mixture onto the middle of the pastry circle wet all around the edges with water and then seal them together. Brush over with egg wash and cook in oven at 200 for 15 to 20 min.

I do not use measurements for the filling as I do it by eye
I am playing all of the right notes just not necessarily in the right order :D.

I use a cheesy mash filling for mine, just mash potatoes with cheese to your own personal taste, gently fry some onions till just begining to brown and add to the potato and cheese mix, salt and pepper to taste and then it really depends on what pastry is lurking in the freezer I have had success with both puff and shortcrust, my personal preference is for puff.

I also sometimes add a little ham or bacon to the potato and cheese mix.

    hi,

i would cook the onoins first as they can't taste quite raw. You don't have to but they will turn out quite flat. The potatoes gives them the puffiness and creamy filling.

When i make cheese pasties i tend to use left over mash, fried onions and strong cheese. I can't make puff pastry so i just use short crust , works just as well.

If you wish to make something a bit more meaty, try frying bacon with the onions or leeks and mixing it with the mash. My boys love cheese or cheese bacon pasties.

Just wanted to say thanks for the inspiration - I was bought a little pasty press as a Christmas present and was looking for a recipe. I shall definitely try the version with mashed potatoes in (to give it a little more creaminess) and shall be doing a big batch of them for the freezer. I've bookmarked the page for future reference. :)

I like to use Cheshire cheese (or Lancashire, or Wensleydale) in the filling when I make pasties - I like the tangy taste and I find it holds up better than Cheddar, which can sometimes go a bit gluey. I tend to cook the onions off gently, then when they're soft season them well (LOTS of fresh black pepper) and leave them to cool. Once they're cool I fold in some crumbled Chesire cheese - you can add dried or fresh sage too, or some bits of cooked bacon, or even a few bits of tart apple. I spread this on my pastry (I prefer shortcrust, but anything will do), fold, egg-wash and bake until golden.
