    Does anyone have any ideas to stretch approx 2 servings of roast pork (shouldar which was cooked long and slow in the oven, so is more like pulled pork) mixed farmhouse veg (cauli, broc, carrot batons and peas) and roast pots) to serve 4? Preferably using storecupboard ingredients as apart from more pots I don't have much in the way of veg.

    Decided to come out of the lurkers corner today after subscribing a wee while back to this thread so hello :j

    Hi Raksha, what about adding some lentils or beans such as haricot ones in with it, make a gravy and add the veg in so it becomes a casserole. You could chop the potatoes small and cook them in the casserole too. A slow cooker is ideal for this but don't cook too long or your already cooked meat will disintegrate. :)

    I'm making soup for lunch with chicken stock i made froma carcass in the slow cooker (simmered overnight and froze after), leftover veg from sunday lunch and lentil/split pea/ barley mix thats been soaked overnight.

    Cracking idea pixnmix - got some tins of beans from Home Bargains in the cupboard and some nice onion gravy concentrate from Approved Foods - I'm drooling already :)

    Coincidence? I come to ask advice for advice for using pork stock and there's an idea for casserole. I still have a bit of pork left and loads of lentils. Nom nom

    I hope you enjoyed your casseroles DundeeDoll and Raksha. My soup was totally lush. All bowls wiped clean with bread. There's enough for lunch tomorrow too :)

    Yes we did, clean bowls alround, with a request for some crusty bread to go with it next time. Got rid of a tin of butter beans that had been hanging around like a bad smell too.

    I have about 3 portions of rice left over from yesterdays curry.

    Any ideas for using it up?

    I have read somewhere that left over rice can be dangerous, is this true?
