I'm never buying pizza again

Just made a pitta bread pizza in the microwave and it was delicious.

Ingredients
1 Wholemeal pitta bread (Lidl - currently 39p for 6)
1 tbsp Tomato puree (Lidl - currently 35p for a tube)
0.5 Mozzarella Light (Lidl -currently 49p for 1 ball, think Sainsbury's might be 5p cheaper at the moment)
1 dash of mixed herbs (any)
1 dash of ground black pepper (any)
Method
  1. carefully cut pitta bread in half
  2. toast both halves for 1 minute or less
  3. put both halves on a microwaveable plate with the inside surface facing upwards
  4. spread tomato puree on each half
  5. cut mozzarella into small chunks
  6. lay out mozzarella pieces on top of tomato puree
  7. sprinkle herbs and black pepper to taste
  8. microwave on full for 1.5 minutes @ 650W
  9. enjoy!
Cost: approx. 36p per pitta, not incl. seasoning, all store-bought ingredients so probably cheaper if you can HM.

I could see these going down well with kids and people who want something quick. If you need something more substantial, you might want to forgo cutting the pitta bread in half and just use two full ones per plate.

It was so moreish that I'm going to have another one but am going to try ham and pineapple. Am now thinking of all the other possibilities...perhaps try the ingredients on the inside so that I can eat it like a Hot Pocket?

Great minds think alike ;) however my version is not as virtuous!!

White pitta bread (I dont cut them in half :rotfl:) just lob on napolina pizza sauce in jar, mozarella, ham & pinapple (is lush), dried oregano & drizzle on olive oil then bake in oven (dont have a microwave) and finish under the grill.. not v mse but :rotfl:mmmm

If feeling super naughty then mushroom and sweetcorn also get lobbed on but that is just going OTT

@*Ro* - just tried the ham and pineapple with some spinach leaves (all Lidl) and it is indeed lush. Will try the mushroom and sweetcorn when I next get some in. Will also experiment with a drizzle of olive oil. Thanks for the ideas!

I have always had pitta pizzas, Mum used to do them for me when I was a kid, I even made them when we last went camping. Never thought to do them in the microwave though...

Another version is the crumpet pizza, take one (or more) crumpets, rub with garlic or spread a little lazy garlic, spread with tomato puree, add cheese of choice, grill, then top with a slice of pepperoni, salami, chorizo or spicy sausage thingie of choice and grill to sizzle the top... saved my sanity many a time!

Edit: I grill the crumpets lightly first, so they're not soggy.

@ragz - I'd be interested in hearing if there's a difference if you do try it in the microwave.

@jpscloud - thanks for the crumpet pizza suggestion. Sounds yummy! I'll try it after I use up the pitta bread.

Sometimes if my children just want a snack I do what I call 'fancy cheese on toast', which is a slice of bread lightly toasted on one side, then spread with tomato puree on the other and sprinkled with cheese, so it's a bit like a pizza really.

Tonight I bought a French stick - not the narrow baguette, it was called grand mange blanc. I cut it in half lengthways then cut each half into four. I spread on a homemade pizza sauce, sprinkled with cheese and baked it for 15 minutes.

silaren - it would be even cheaper if you made your own pitta bread ;) To be honest I never buy pittas now because bought ones seem to be a bit like cardboard, so I make my own from my normal bread dough.

Me and OH loooove pizza pita pockets, again using lots of Lidl ingredients :D Their light mozzarella is delicious, I've never found a light version elsewhere for anywhere near that cheap.
Mix 3tbs tomato puree/passatta with 1 ball of diced up lidl light mozzarella and diced chorizo, mushrooms, whatever. Toast pita breads and when they have puffed open cut the top corner off each and push in the pizza topping mix inside. That mix is enough for three heavily filled pitas. Put them in a bowl/on a plate at a slight angle so the mix doesn't fall out and microwave for 1 minute. They are so hot you have to wait a min or two before eating them.
Pitas stuffed with egg and cheese mix is delicious too, we eat it for breakfast sometimes!

mmm I used to make these when I was a weightwatchers fanatic. now I'm a fatty bum bum again lol! Thanks for the thread OP it's reminded me of them and I'll have to start making them again rather than having full size oven pizzas.

I have been making my own dough pizzas from scratch though which are pretty cheap, and I use a small baking round tin to keep the portion size down.

My versions, inspired by Nigella, is much the same but on Naan Bread, more expensive (I think) than Pitta Bread but less expensive than ready made pizza.

    Cut Naan to size.
    Spread with Tomato puree
Cut up mushrooms and courgettes to bite size, or whatever you fancy really.
    Sprinkle grated cheese oven
Pop in oven for 10 - 15 mins gas mark 6

Thanks for all the new ideas - I'm going to try them all!

@Justamum - Unfortunately, I don't have a working oven at the moment; just the hob works. I suppose I could experiment and see if I can make pitta bread in the microwave. :D
