Hello,
I want to make this today for my hampers but the recipe calls for 600ml cider vinegar. I have 350ml. I also have bottles of red wine, balsamic and white wine vinegar. Would it make much difference if I did half cider & half red/white wine?
I'd rather not spend another £2 on a 2nd bottle of cider vinegar as it's already cost a small fortune buying red peppers and jam sugar for it.

Don't use red wine vinegar - I would use the white wine vinegar.0

I use bog standard malt vinegar for my chilli jam - it works fine, it's only there to create acidity - and in anything strong flavoured, it would be very hard to discern between, say, cider vinegar and malt!0
