    Forgot to say yesterday that I found 2 slices of herb and garlic bread in the freezer that had been there ages. They wouldn't be any good for having with soup or anything (tbh they weren't that nice to begin with!) I was just about to chuck them but remenbered there was a recipie on here for savoury bread and butter pudding! They will not go to waste now:T

    I heard that carrot jam was pretty good so made some last year, it's delicious and definitely a talking point, makes a great gift for someone too. I chooped the carrots as finely as possible and boiled them up in some water until they were really soft. Then I drained the water (reserving it) and added the same amount again of sugar (I used regular sugar) and cooked it up until it thickened, adding a little of the jiuce back in later. Yum

    I made macaroni pudding from left over macaroni.
    It was surprisingly lovely! :D

    Even the kids liked it! WOW!!

    We ate it warm with a drizzle of maple syrop over it.
    Very nice!
    Very filling though! But lovely.

    I have been to the library and got some cookery books and a lovely cake book. Will copy some recipes for when we come over, we can bake for the kids and DH's, sure there won't be any leftovers.

    We had some roast pork left over from sunday lunch and quite a large amount of apple and herb stuffing.

    I softened some diced onion and sliced peppers in the microwave (didn't add any water as these were all frozen). Then added the roast pork cut into small chunks, some of the stuffing broken up and then poured a jar of SmartPrice curry sauce over it and warmed it all through in the microwave. Served with pasta (we aren't over keen on rice) and a broken naan bread that had been lurking in the freezer for ages. OH was well impressed, nothing wasted and it barely cost anything.

    made a large veggie casserole [inc broccolli stalks] too, yesterday, as well as the cake so that the oven was full. we had some for dinner last night and this morning i froze the rest in 2 batches. so thats 2 ready made meals when neededready to reheat ans serve, can be seved with steamed cabbage or cauli and new potatoes. lovely.

    Lunch today was whoopsied best steak, whoopsied shitake mushrooms, HM napoletana sauce from whoopsied tomatoes, whoopsied charlotte salad potatoes, freshly picked spinach and whoopsied Gu chocolate trifle. Followed by value ground coffee. Paid full price for the milk in the coffee!
    The total was £2.80 for both of us AND the steak was delicious.
    The GU trifle was nice but too rich for us, so wouldn't buy it at full price.

    Have frozen the other piece of steak, frozen the napoletana sauce into portions so pleased indeed.

    How long after the best before date on food, do you guys still eat it? I have found some quorn fajita strips at the back of the fridge. They say best before 6th June, however they are still sealed, do you think they would be ok to eat or are they best off in the bin?:eek:

    I'd guess they are probably ok - open them up and if they smell ok, I'd eat them! Well, I would if I liked quorn, anyway!

    Had my first failure today - threw out a festering swede. Trouble is I love swede but the rest of the family don't, so I try to sneak it in, but the opportunity to use it hasn't arisen.

    To make up I am doing a bits and pieces risotto using leftover gammon from a joint, part of an onion and part of a red pepper left over from a rice salad (using up leftover rice - this is sort of having a domino effect!). I am sneaking some more of the quinoa in with the risotto rice too, to use some more of that up.

    And the swede has gone in the compost bin, so at least it's not going to landfill.

    I really like a lot of these suggestions and would like to join the challenge if that is okay. My main problem is that as a single person living in a shared house where we don't share food or cook together I have very little freezer space and can't palm off food on anyone else ;)

    Anyone else in a similar situation? I've been getting an abel and cole box each fortnight which has been great as you get to try new things and specify what you don't want but the majority of my fridge space is taken up with veggies, delicious I grant you but doesn't let me store much else
