    I'm really enjoying this thread :) it makes you feel like you've achieved something when you've saved something from going in the bin :)

    I had going to waste;

    1 pint of double cream
    15 eggs
    3 pints milk
    1 block of stilton
    1kg of apples
    1 punnet of blueberries
    1 box of oats (sell by date Jan 2009)

    So what I've made is;

    double cream & eggs = cream has made chocolate filling for 24 butterfly cakes & 1 chocolate Victoria sponge ... all of which have been portioned up and put in freezer for lunch boxes

    Milk & stilton = cheese sauce which has been frozen in portions for use with future lasagnes

    apples & blueberries & oats = made into crumbles and frozen in silver trays so they can be put straight in to cook

    Altho I'm still trying to figure out what to do with 1/2 loaf white bread (going stale) and 12 clementines :)

    Burp x

    with your half loaves of bread cut into chunk and sprinkle with olive oil and bake in oven til toasty and hey preston you have croutons should keep in air-tight container for a wk

    We normally use up the ready to roll icing scraps by making mint fondants. Just knead the icing scraps together with a drop of peppermint essence, roll out to required thickness and use a clean fizzy bottle top as a cutter. Sieve some icing sugar onto a tray and place the fondants on to dry. You could dip them in melted chocolate (left over maybe if like us you still have some left:D )

    We made marzipan fruits with the leftover marzipan this year but I like your idea and may do that next time.

    thanks catznine for this idea. This is brilliant. I have some peppermint essence and will give them a go tomorrow. I shall be making more cakes later this year, so will end up making lots of chocolate marzipan balls and mint fondants and these can become a present for a friend with the 10p chocolate bars I have just stocked up on!
    thanks again

    Our poor dd had a dental abcess over Christmas! She is on soft food for now so I have been cutting the crusts off slices of bread that she has with soup, and popping them into the freezer. I now have enough to crumb and with some over ripe bananas will make banana crunch pudding. For a pudding for 2 of us I just grease a baking dish with some butter, place sliced bananas (1 large or 2 small will do) in the dish and pour over a spoonful of orange juice and a little honey. Place breadcrumbs on top and some knobs of butter and a little demerara sugar over the top (I use up any little individual packets I have for this) coconut would be nice too. It's lovely with ice cream.

    Any ideas for using up some brie? I don't think it will freeze, which is a shame. Some of the stilton is already in the freezer.

    I keep getting beetroot in my veg box and much as I love it I am running out of things to do! I have roasted it in the oven and it's now sitting in the fridge - any ideas? I wondered if i could cut it up and put it into the jar of beetroot I've got from supermarket - Is that a mad idea?

    On the River Cottage Autumn programme, they were trying to get people who said they didn’t like beetroot to like it and they made:

    Beetroot and apple crumble
    Beetroot ice cream
    Beetroot brownies

    They were all liked by the testers, haven’t tried any myself, but may try when I finally get round to growing some.

    All are on the www.rivercottage.net site under seasonal recipes, October

    Google beetroot cake and get a recipe. Its delicious.

    Also if you cook then blend some beetroot and add it to apple and blackberry crumble, no one is any the wiser and it tastes lovely.

    If you cook then dice the beetroot and add it to a rasperry jelly made up with half water and half vinegar, it makes a great salad or curry accompaniment
