We have almost 1kg of eating apples ... any idea what we can use them for? Normally we'd have 2 everyday with packed lunches for work but because it's the holiday we haven't!
Thought about making my own version of Mr Kipling Apple pies and sticking them in the freezer for packed lunches ... any other ideas appreciated

Ooh just had a brain wave ... gonna make them into crumbles to freeze ... will chuck in some frozen blueberries I have to... some with oaty toppings ... some with almondy toppings

ok, thanks for your suggestions re marmalade...how do i make it? I make lots of jam..do you make it the same? Do you use the whole orange, peel as well?
When I made marmalade I peeled and chopped a few leftover clementines and oranges, weighed the fruit and added half the amount of jam sugar and popped it all into the bm with a splash of lemon juice, I did put in some peel but not too much and just stuck the bm on the jam making cycle. I keep getting beetroot in my veg box and much as I love it I am running out of things to do! I have roasted it in the oven and it's now sitting in the fridge - any ideas? I wondered if i could cut it up and put it into the jar of beetroot I've got from supermarket - Is that a mad idea?

Chocolate and beetroot cake... very tasty and very moist! Like the carrot in a carrot cake, beetroot keeps the cake moist and helps it to last for days!0 -

Not completely mad but you would be better off getting a jar of pickling vinegar or cheapo malt vinegar and some spices and pickling your own. If you top up the supermarket one you will dilute the vinegar so it will be more likely to spoil prematurely
How about beetroot chutney or a relish? They would use a fair bit and chutney keeps for months unopened0 -
P.S you also need to boil the beets first if you pickle it0

I'm really enjoying this thread
it makes you feel like you've achieved something when you've saved something from going in the bin
I had going to waste;
1 pint of double cream
15 eggs
3 pints milk
1 block of stilton
1kg of apples
1 punnet of blueberries
1 box of oats (sell by date Jan 2009)
So what I've made is;
double cream & eggs = cream has made chocolate filling for 24 butterfly cakes & 1 chocolate Victoria sponge ... all of which have been portioned up and put in freezer for lunch boxes
Milk & stilton = cheese sauce which has been frozen in portions for use with future lasagnes
apples & blueberries & oats = made into crumbles and frozen in silver trays so they can be put straight in to cook
Altho I'm still trying to figure out what to do with 1/2 loaf white bread (going stale) and 12 clementines

sounds yum - love oaty crumbles....:D
you could always freeze the bread as breadcrumbs and take out as much as you want if you want to make stuffing or breaded whatever....;) ..although I'd be tempted to make some sort of bread and butter pudding using some of the clementines...or you could make some garlic croutons for soup....
