Red kidney bean curry

Aldi selling cans of red kidney beans for 16p a can at the moment, so I've been stocking up & am posting this curry recipe in case anyone is doing the same. This recipe serves 4 & is tasty, very cheap & filling when served with rice:
2 tbsp oil
3 medium onions, chopped
2.5 cm root ginger, finely chopped
2 green chillies, finely chopped
3 garlic cloves, crushed
1 tsp cumin seeds
1.5 tsp turmeric
1 tsp paprika
1.5 tsp curry powder
1.5 tsp garam masala
1-1.5 tsp salt
5 tbsp water
2 cans red kidney beans, drained & rinsed
1 can chopped tomatoes
Chopped fresh coriander
Heat oil & sizzle the cumin seeds for 30 secs. Add onions & cook for 3-4 mins till softened, but not browned. Add the garlic, chilli & ginger & fry for a couple of mins. Then add the spices & salt, stirring well for a minute or so. Stir in the water to make a paste & cook this for 1 minute, before adding the tomatoes. Bring to the boil, reduce heat & add the drained kidney beans. Stir well. Cover & simmer for 10-15 mins. If it looks as though it's getting dry, add a little more water. Serve sprinkled with chopped fresh coriander with rice or bread.
I have found that this recipe can be made in advance & reheated and it also seems to freeze well. As we also like chilli con carne & fajhitas, I think I'd better get a few more of those 16p cans in! Anyone who makes this, hope you enjoy it. Foxgloves x (P.S Don't eat foxgloves....v poisonous

I'd imagine this could be a windy recipe0

not if you use a little asafetida also known as Hing a little bit of this used before simmering reduces the "windy" effect. I no longer cook any pulses without using a little of this, does seem to work well!

I actually have some of that in the cupboard. It was needed for a curry recipe.
I'll give it a blast next time I make a bean soup or chilli0 -
Actually, this recipe is fine.....if you eat a high-fibre diet, I think your system gets used to beans & pulses as I make this quite regularly & neither of us have any ill effects of the type you suggest!2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever

I totally agree with Foxgloves. Beans and pulses have no effect on me- but on my OH? Phewy! I have read that for this reason it may be wise to gradually up your fibre intake, I think I read that overwise it sits behind slower transit food and ferments? Hence the windypops.0
