    ohh i will watching that tonight, In yesterday daily mail the chef jean christophe puts a large spoonfull of robersons luxury rum and raisin mincemeat under the skin of the bird. sounds good i might try it

    Def leave to rest. Think its to do with the protein in the meat or something :confused: and if left to rest it makes it easier to carve.
  • Yes, at least 20 - 30mins. Secret to cooking a turkey is high-low-high. Give it 30mins at high temp (220C) to seal, drop temp to 170 - 180C to slow cook for an extended time, then a quick blast back at 220C for 30 - 45mins to brown off. The slow cooking will ensure that you don't get any pink meat!
