Summer's here, what shall we eat??

BBq's going on everywhere, but money is tight and I don't feel like cooking, what kind of things do u all cook when you don't really want to? pasta with pesto plus cold meat or tuna, risotto, jacket spuds with something for us but what do u all do??? need somw quick and cheap and healthy ideas to get me through the summer this year. In anticipation!!

    Hello Teg-Rem,
    Here at Silver Spires we have omelette with home grown salad leaves, we vary with cheese, ham if we have any left over or in the freezer or use onions and left over or need to be used veg. Home made pizza with coleslaw, home made soup, dahl with rice or millet, fish pie (I buy the mix when it is reduced or on offer and freeze) with a breadcrumb and cheese crust - I top with cheesy mash when the weather is colder. When the hm bread is getting past its best and the new loaf is made, I process the 'heel' of the bread into crumbs and freeze. Cauliflower or broccoli cheese. All of these go well with jacket potatoes if there are any hollow legs to fill.

    I would recommend a copy of this book:

    Good Food: 101 Mediterranean Dishes: Triple-tested Recipes

    It's my food bible at the moment and can be purchased from Amazon for a penny. May change your eating habits forever!

    I grow herbs; basil, parsley, chives, garlic chives, coriander, and thyme on my balcony and the quickest thing to cook is a herby omelette with fresh herbs.

    In the summer we tend to eat alot of pitta breads stuffed with salad and either lamb kebabs/burgers/falafel. A dolop of greek yogurt and some chili sauce to add a kick. Pitta is a very light and healthy alternative to most carbs and only costs around 36p a packet.

    Another lazy summer meal is a tuna or cooked prawn salad with some rustic bread.

    Oh yes pittas everytime, all of these . bacon and egg, chicken and sweetcorn. ham and salad, cornbeef and pickled beetroot, in fact you name it and stuff it in a pitta and i am happy.

    :jHM fishcakes (potato with tuna or salmon, spring onions and seasoning all packed togather & fried) with a pile of salad. Sometimes bought (but fresh-usually discounted bargain bin/whoopsied) fishcakes. Light but healthy and filling & V quick :)
