Getting a mortgage with no 'guarantee'd' income

How do you go about re-mortgaging/changing lenders when your offer period ends, if you are not employed, but make enough money to get by elsewhere?
Am possibly facing redundancy soon with a large pay off that I intend to invest, just wondered how lenders go about determining if you could manage increased repayments etc

They'll require proof so without any employment or other regular income you'll struggle to remortgage.0

If you just want to look at new deals with your current lender your income wouldnt be relevant0
