    I'm sure there is Celery Salt in there. I tend to mix all sorts of spices in flour in a plastic bag then put the chicken in - been very close to flavour (so family tell me), but only when had celery salt in. I shallow fry these in very little oil

    it is very much like KFC, and lasts for ages. I just chop up some chicken breasts roll them in the mix and deep fry, use a deep frying pan as the oil is no use after, other than for the chips you are ahving with them.

    Has anyone found a recipe which is similar to the KFC one (I know its all secret and that ;)). I want to make it as the kids have been asking for kfc, and just dont have the funds for takeaway atm.

    I made some recently similar to the one in the Economy Gastronomy book that was my M Day present. Basically, poach the chicken pieces first - if you add onion etc. you also have a stock for soup etc. left which I froze. The 'batter' is basically made by dipping the pieces in seasoned flour, then milk, then back in the seasoned flour then deep frying (I couldn't hack the amount of oil so mine were fried somewhere in between shallow and deep! The seasoning is in the flour - I used salt, pepper, cumin and paprika. They tasted good, but I think next time I'll use more spice. The coating was good and crisp though. I might have a google for different spice mixes to see if I can get a better flavour. Dead easy to do and I was very pleased with how simple it was. I've never really deep(ish!) fried anything and wouldn't have thought of cooking the chicken first - probably obviously to everyone else though! The chicken pieces were really moist inside. I used Morrison's pack of 3 thighs, 3 drumsticks - good size pieces for £3 and made oven wedges and coleslaw to with them. Hope that helps.

    hi cuca - i bought a book called 'The Takeaway Secret' on Amazon.co.uk, it arrived yesterday and my niece and nephew tried the fish and chips recipe for dinner today, they ate the lot and seemed very happy with it :)

    I haven't tried it yet but there's a recipe in the book for Fried Chicken which is listed as 'american fast food style', i'd imagine this is meant to be a KFC style recipe - there are lots of other recipes in the book too for kebabs, curries, burgers etc which all look worth trying and will hopefully help keep the kids from asking for takeaways all the time (fingers crossed!)

  • My OH loves Zinger Tower Burgers from KFC. Sadly, at £3.29 a pop he can't have them as often as he likes so I came up with a cheaper homemade alternative that is healthier and goes down just as well!:j

    You will need:
    Chicken (see below)
    White burger buns (the 6 pack from Sainsburys is only 64p!)
    Lettuce
    Mayo
    Some sort of salsa or hot sauce

    Chicken.
    I have two options for the chicken, depending on the finances and/or how lazy I'm feeling!

    1) Homemade all the way!
    • Slice up some chiccken breast and steam (this means it's properly cooked and stays moist
    • Grate some stale bread to make your own breadcrumbs. For a kick, add some cumin or chilli powder.
    • Beat an egg and coat the cooked chicken in it
    • Cover the eggy chicken with the breadcrumbs, ensuring there's a nice thick coating
    • Put in a pan with a little oil and shallow fry, turning occasionally, until all sides of chicken are nice and crispy.
    If you want a healthier version, skip the breadcrumbs bit and just use the steamed chicken. My fast-food loving boy doesn't object to this, so it's a good way to introduce a healthy option

    2) Supermarket option
    Buy a packet of either coated goujons or mini fillets. One packets should make about 4 burgers. Most supermarkets do a Southern Fried flavour.

    Once you have sorted the chicken, lightly toast the buns. On the bottom half of each bun, put a little mayo. Place the chicken on top. Add some leaves (we need to at least PRETEND this is healthy!) then top with a bit of mayo and the salsa/hot sauce.

    These burgers are now a staple in my house and satisfy the cravings for expensive, dirty chicken without breaking the bank. I prefer them too!

  • Good stuff, I often do the supermarket version. Rather than toasting the bun though (I use the pre-sliced warburtons when on offer), I press them sliced-surface-down onto a hot dry frying pan for a minute or two. I find it mimics the bun toasting machines that takeaways use. :)
