    Hi everyone,

    My OH would like me to make him spicy chicken in breadcrumbs like they do in KFC (he likes the idea, but he doesn't trust take away chains like KFC or McDonalds). I have deep fat frier and breadcrumbs, thats no problem.

    But I don't know how:
    1/ how to make it spicy - do you roll the chicken in something spicy before your flour, egg & breadcrumbs?

    2/how long to leave the chickend drumstick in deep fat frier for to make sure they are cooked through?

    Any help appreciated

    Hi

    When I make HM KFC at home I add cajun seasoning or chilli powder to the breadcrumbs. Prefer the flavour of the cajun personally. I only fry in the deep fat frier to seal and then bake in the oven. If you cook fully in the fryer they tend to be burnt on the outside and raw in the middle still.

    Isn't the oil in the deep fat frier a bit spicy afterwards though? Does it not leave any taste in the oil?

    If so I might do it as a last thing before having to change the oil anyway.

    I don't use the deep fat fryer for my home-made kfc because, as you say, the spices taint the oil. I just put some oil in a frying pan and seal the chicken in that then stick it in the oven to cook.

    Hey, not sure about those 2 questions really, but their spicy chicken doesn't have breadcrumbs on it. Just thought I'd let you know before you give it a go :)

    Oh yeah and about the recipe at the start - it can't be the 'secret recipe' because as the walls of the KFC restaraunt say, the secret recipe has 11 herbs and spices :o
    But as noone will probably ever work out the real recipe, maybe that one is the closest to it :)

    Regarding the real recipe, it contains no hot spices. I have a very bad allergy to them and can spot the tiniest and there definitely isn't any curry or similar.
