'KFC' style chicken

I have always got good results using dried corriander, sage, paprika, salt and pepper as the only spices.
Steep chicken in salt water and a little vinegar for 4 hrs, drain and dry.
mix corriander, sage, salt, pepper and egg, and marrinate chicken in mixture for 1 hour.
cover with flour and fry in hot oil until coating turns brown, then finish off in the oven.0 -
its not quite KFC, but it is a delicious coating none the less..
grate the zest off a 2 lemon, stab a few holes in the chicken (1 chickens worth, so 4 quarters, or joint further to drumsticks, thighs, etc) and stuff some zest in each hole.
put the chicken in a bag with the juice from the lemons, give it a good squooshing and leave overnight in the fridge
season some plain flour with salt and pepper, coat the chicken in the flour making sure they are well covered (it will stick to the lemon juice) and bake in a lowish oven.. about 150 for about a hour turning now and again..
it makes a lovely stick crispy chewy lemon coating and is delicious!0 -

No sure if this will help anyone, but we often buy KFC chicken strips meal which is about £13! :eek:
Brough 6 chicken breast from asda (£5) the rest of the ingredients were in my cupboard (or you can pick thm up from supermarket)
Heres the ingredients:
Ingredients
6 chicken breast
1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon msg (dont need to add this)
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon baking powder
Directions
Cut 6 chicken Breasts into strips, or you can buy chicken tenders in the store.
Marinate them overnight.
Preheat the shortening in a deep-fryer to 350 degrees F.
Beat 1 egg and 1 cup of milk.
Dip the chicken into the egg mixture.
Dip the the chicken into the coating and then double dip.
Fry in fryer a few at a time till they are golden brown about 5 minutes or until they float.
Remove the chicken to a rack and allow to drain for 5 minutes
I think they taste so similar!! not healthy but if your having a KFC thats not healthy anyway! hope this hasnt been posted.:T0 -

i didnt do this and they still tasted as good but to marinate its:

2 tablespoons Kosher Salt
4 tablespoons MSG
1/8 teaspoon Garlic Powder
1/3 cup Bottled Chicken Concentrate
5 cups water
doesn't sound too good though0 -

I remember this as being explosive from school Chemistry lessons, and have no idea where one would buy it. It sounds like an interesting recipe though:D.
I agree with you I'd leave this bit out too - the coating sounds yum though.
