METHOD

Place chicken in oil to brown or fryer
Cook until golden and juices run clear when pierced
Drain on kitchen roll and serve warm with chips and dips or coleslaw
This is a recipe I can say really is good. It's the same as one I have in a cookery book called "The Puddin Hill Cookbook"
The book itself is American in origin and tells a story between the recipes. I found it in a charity shop years ago and paid £1 for it then.

Tried the recipe 2night as a trial run, plan B was pasta.
He loved it with reservations, and so do I.
this is what I did...
Put 2 chicken breasts in oven till cooked, just.
Meanwhile 2.5 oz flour (whats a cup?)
1.5 tbsp dried mixed herbs
.5 tbsp black peeper
.5 tsp salt
1 tbsp paprika(sp)
in a bag & shake.
take chicken out, cut into strips, put into bag & scrunch around, then shallow fry.
Both think thats WHAY too much pepper and we could taste flour, so that needs to come down.
Did put 1st breast in milk first, but that just clumped, 2nd one went straight into bag & turned out lovely.
Might try it by making a full on batter, but that needs deep frying, not something I`m comfortable with.Living debt free, since Sept 08 & Dec 10 :wall:

Here is the one that I do regularly & the kids love it, I personally only use chicken breast.
Dip chicken breast into beaten egg, then into flour mixed with some 'season all' & a little salt and pepper, I then brown it in a frying pan with a little oil and butter then put in a oven tray with a rack in the oven for about 15-20 mins. (I do cut each chicken breast into about 3). We have this with barbeque ribs and its my kids absolute favourite.0 -
My KFC is simple stuff, I won’t even bore you with definitive quantities, you can see how it works. I think the chicken oxo gives the special flavour and the lack of skin “healths “it up. Sort of.
Four 4 chicken breasts (each breast sliced into 3 strips)
2 eggs
Plain flour (a couple of mugs full)
Chicken Oxo Cubes (loads i.e. at least 8)
2 tablespoons of curry powder.
Salt and pepper
Mix all the dry stuff. Egg-dip the chicken and dredge through the flour-mix. Deep fry. Bingo. Really nice fried chicken.My eyes! The goggles do nothing!0 -

I used to love KFC - but stopped eating it a few years ago after seeing THAT video! If you like KFC then don't ask... as you'll not eat it again.
Anyway... I did love the coating. I've got recipes for fried chicken... and tonight I thought I'd give it a bash. Well... it was good... actually better than I thought my first attempt would be - but it was lacking something. I used chilli powder, cracked black pepper, and salt mixed into the flour. It seems to need a kick but not chilli.... as that was fine. I just can't put my finger on it. Maybe grated lemon rind?
Anyway - as it cost me the same to feed the family as it would to buy ONE KFC... I thought this is the forum to try!
Has anyone got any suggestions on what I could add to the flour to give it a bit more depth? A bit more pzazz maybe? Hubby would like me to cook it naked - but it's the chicken that needs the extra spice - not my kitchen! :rotfl:

try "old bay seasoning" it's american, comes in a tin and is fab

i got some in a garden centre (i know!!) called Longacres, and tried it on fried chicken and hubby loved it! said it was better that kfc (OMG and from him that is HUGE) the label on top says its distributed in the UK by Americatessen, 01189730503, RG40 4RF (so nr Reading)hth
